Els seus noms s\u00f3n Vicent Todol\u00ed, H\u00e9ctor Carri\u00f3 i Roser Cabrera i all\u00f2 que els uneix, la seva passi\u00f3 per l&#8217;oli. Perqu\u00e8 l&#8217;oli, com ells diuen, \u00e9s territori, \u00e9s tradici\u00f3 mil\u00b7len\u00e0ria, identitat i delicadesa. Els tres han estat en la fira Di\u00e0nia, Terra d\u2019Oli d&#8217;Els Magazinos per a parlar dels seus projectes i de l&#8217;oli, un bon aliat del plaer i un enemic del temps. Perqu\u00e8 cal consumir-lo d&#8217;any en any i, a difer\u00e8ncia del vi, no conv\u00e9 deixar-lo envellir, advertia Francisco Albert. Ell va ser l&#8217;encarregat de dirigir el tast que va acompanyar el magn\u00edfic esmorzar que van preparar Diana Cervera i l&#8217;equip del restaurant A la fresca, esquitxant de tocs de modernitat plats que beuen de la cuina tradicional.<\/div><\/p>\n\n<p>Perqu\u00e8 maridar olives amb taronja i vermut o elaborar un bony\u00edtol en semisala\u00f3 amb torr\u00f3 d&#8217;ametlla sona molt b\u00e9 i fa millor gust. Per no parlar de l&#8217;esgarraet amb verdures de Cuina de Territori -el programa amb el qual Els Magazinos i Cervesa T\u00faria promouen els productes i la cuina de proximitat, lligada a les arrels-, la coca d&#8217;oli i sal amb sobrassada i mel o el bescuit de llimona amb xocolate, oli i sal que es van servir. El Totoli, l&#8217;oli que elabora aquest historiador de l&#8217;art que va ser director de la Tate *Modern de Londres, \u00e9s un oli equilibrat, no massa intens. El productor cuida l&#8217;embotellat i l&#8217;etiquetatge, importants per a un producte que \u00e9s expressi\u00f3 de la terra.\u00a0<\/p>\n\n<p>La seva aventura amb l&#8217;oli -\u201cl&#8217;\u00fanic suc que es conserva a si mateix\u201d, com li agrada dir- va comen\u00e7ar en els anys 90, quan va comprar un vell corral i unes terres als peus de La Forad\u00e0. Va sentir que aquest lloc m\u00e0gic, triat pels frares franciscans per a construir un convent, era l&#8217;idoni. Des d&#8217;all\u00ed s&#8217;albira l&#8217;alineaci\u00f3 solar de la penya m\u00e9s emblem\u00e0tica de la vall, un miracle que succeeix dues vegades a l&#8217;any, a la primavera i a la tardor. El miracle de l&#8217;oli es repeteix tamb\u00e9 cada any si, com va oc\u00f3rrer no fa tant, no hi ha un incendi pel mig.\u00a0<\/p>\n\n<p>Todol\u00ed parla dels beneficis de l&#8217;agricultura. La terra treballada actua com a fre davant el foc i permet recuperar la bellesa perduda del paisatge, abandonat unes vegades, arrasat unes altres i que en moltes ocasions acaba alimentant l&#8217;urbanisme desaforat. En quaranta anys, han canviat els sistemes de sembra, treball i recol\u00b7lecci\u00f3 i tamb\u00e9 el vocabulari, amb la p\u00e8rdua d&#8217;un 70% de les paraules que formaven part del llenguatge de l&#8217;oli. N&#8217;han aparegut altres noves, per\u00f2 en pocs anys objectes com el \u2018mauranet\u2019 cauran en l&#8217;oblit.\u00a0<\/p>\n\n<p>Cabrera sost\u00e9 que l&#8217;oli s&#8217;ha convertit en un element socialitzador, com el vi. Tamb\u00e9 remet els assistents al vi H\u00e9ctor Carri\u00f3, que tira m\u00e0 del refranyer popular per recordar que \u2018l\u2019oli i el vi, remei div\u00ed\u2019. Perqu\u00e8 Tossut Agroecologia Sostenible, a m\u00e9s d&#8217;oli, elabora vi. La alfafarenca \u00e9s una varietat d&#8217;oliva molt escassa, comenta H\u00e9ctor Carri\u00f3, i que requereix gradient t\u00e8rmic. \u00c9s a dir, que hi haja difer\u00e8ncia de temperatura entre el dia i la nit. Alguna cosa que dif\u00edcilment ocorre amb les oliveres plantades m\u00e9s prop de la mar. El projecte de Carri\u00f3, que en 2022 va aconseguir el primer premi al millor AOVE Ecol\u00f2gic de la Comunitat Valenciana amb el Tossut i el segon amb el Ver\u00ed, \u00e9s reflex de l&#8217;amor a la terra. Se li ha donat car\u00e0cter protector i ha tingut pres\u00e8ncia destacada en la mitologia i en l&#8217;art.
