Quin paper juguen les emocions en el nostre nivell de satisfacci\u00f3 en la taula? Com substituir el gluten en la cuina o com aconseguir aportar elasticitat, humitat i estructura a masses de pans i productes enfornats a les elaboracions que prescindeixen d&#8217;ell? Per qu\u00e8 els eri\u00e7ons es resisteixen a colonitzar de nou el litoral de D\u00e9nia? A aquestes i altres preguntes relacionades amb la producci\u00f3 del vi, la reutilitzaci\u00f3 del bag\u00e0s de la cervesa, l&#8217;\u00fas de les plantes silvestres o el potencial gastron\u00f2mic dels bolets, les microalgues com a ingredient o l&#8217;\u00fas de la posid\u00f2nia per a millora la qualitat organol\u00e8ptica de les tomaques han tractat de donar resposta els treballs de recerca gastron\u00f2mica desenvolupats en la Universitat d&#8217;Alacant (UA) durant l&#8217;\u00faltim any que han estat presentats a D\u00e9nia.<\/p>\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-15 is-layout-flex wp-block-gallery-is-layout-flex\">\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"678\" data-id=\"86965\" src=\"https:\/\/canfali.com\/app\/uploads\/2026\/01\/gasterra-5-1024x678.jpg\" alt=\"\" class=\"wp-image-86965\" srcset=\"https:\/\/canfali.com\/app\/uploads\/2026\/01\/gasterra-5-1024x678.jpg 1024w, https:\/\/canfali.com\/app\/uploads\/2026\/01\/gasterra-5-300x199.jpg 300w, https:\/\/canfali.com\/app\/uploads\/2026\/01\/gasterra-5-768x509.jpg 768w, https:\/\/canfali.com\/app\/uploads\/2026\/01\/gasterra-5-1536x1017.jpg 1536w, https:\/\/canfali.com\/app\/uploads\/2026\/01\/gasterra-5-2048x1356.jpg 2048w, https:\/\/canfali.com\/app\/uploads\/2026\/01\/gasterra-5-scaled.jpg 2560w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n<\/figure>\n\n<p>Alguns dels projectes per al foment de la R-D-i en l&#8217;\u00e0mbit gastron\u00f2mic del Centre de Gastronomia del Mediterrani Gasterra UA- D\u00e9nia donen continu\u00eftat a recerques iniciades amb anterioritat. Com a novetat, les iniciatives que han obtingut les ajudes a la recerca en la convocat\u00f2ria de 2025 han comptat en molts casos amb la col\u00b7laboraci\u00f3 d&#8217;empreses de la Marina Alta, com va destacar l&#8217;alcalde, Vicent Grimalt, durant l&#8217;acte. &#13;\n<\/p>\n\n<p>Grimalt es va mostrar conven\u00e7ut que el futur passa per la recerca, la formaci\u00f3, la innovaci\u00f3 i la creativitat, al mateix temps que va recordar l&#8217;aposta que s&#8217;ha fet per la ci\u00e8ncia, el desenvolupament sostenible i l&#8217;economia circular des de D\u00e9nia com a ciutat creativa de la gastronomia.<\/p>\n\n<p>Amb la presentaci\u00f3 dels treballs de recerca desenvolupats en 2025, s&#8217;obri de nou el termini per a la presentaci\u00f3 de projectes a les ajudes del programa de R+D+I de la UA i l&#8217;Ajuntament de D\u00e9nia. El resultat de les iniciatives seleccionades es presentar\u00e0 l&#8217;any que ve en Torrecremada, on es traslladar\u00e0 en breu la seu de Gasterra, va indicar l&#8217;alcalde.<\/p>\n\n<p>En l&#8217;acte d&#8217;enguany, celebrat encara en el CdT, han intervingut tamb\u00e9 la degana de la Facultat de Ci\u00e8ncies de la UA, Magdalena Garc\u00eda Irles, i la directora de Gasterra, Juana Jord\u00e0, eles quals han destacat la imbricaci\u00f3 dels projectes en el territori.<\/p>\n","protected":false},"excerpt":{"rendered":"Pot canviar una hist\u00f2ria la nostra percepci\u00f3 sobre el sabor d&#8217;un plat?
