{"id":74701,"date":"2025-08-31T08:32:00","date_gmt":"2025-08-31T06:32:00","guid":{"rendered":"https:\/\/canfali.com\/?p=74701"},"modified":"2025-08-29T14:00:33","modified_gmt":"2025-08-29T12:00:33","slug":"entrevista-amb-amor-lopez-aehtma","status":"publish","type":"post","link":"https:\/\/canfali.com\/ca-es\/entrevista-amb-amor-lopez-aehtma\/","title":{"rendered":"Entrevista amb Amor L\u00f3pez (AEHTMA)"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">\u201cLa base de l&#8217;\u00e8xit \u00e9s la professionalitat\u201d<\/h2>\n\n\n\n<p><strong>La presidenta de l&#8217;Associaci\u00f3 d&#8217;Empresaris d&#8217;Hostaleria i Turisme de la Marina Alta (AEHTMA), Amor Lydia L\u00f3pez Peligero, forma part de la junta directiva de l&#8217;entitat des de fa m\u00e9s de 25 anys. \u00c9s la propiet\u00e0ria de l&#8217;Hotel Villamor, un establiment de 22 habitacions situat en Les Marines que va ser constru\u00eft pel seu pare. Va obrir les portes en 1972 i en els seus inicis va funcionar com un hostal on tamb\u00e9 es donaven menjars i sopars. Ha sigut objecte de diverses remodelacions i ara s&#8217;anuncia com a hotel boutique. Des d&#8217;ell gestiona tamb\u00e9 el bloc d&#8217;apartaments contigu, del mateix nom.<\/strong><br><br>&nbsp;<br><br><strong>PREGUNTA: Est\u00e0 de moda aix\u00f2 de l&#8217;hotel boutique. Qu\u00e8 \u00e9s realment?<\/strong><br><br>RESPOSTA: Un hotel xicotet que cuida el detall, on tot est\u00e0 molt personalitzat.<br><br><strong>P: La seua \u00e9s una clientela fixa?<\/strong><br><br>R: Al llarg de tants anys tens una clientela fidel en apartaments. Per\u00f2 la clientela es fa major i els models tur\u00edstics canvien. Aix\u00f2 de les fam\u00edlies que passaven un mes sencer s&#8217;ha acabat. Les vacances s&#8217;han acurtat. Potser ara atraiem m\u00e9s a gent jove, parelles. \u00c9s un hotel <em>only adults<\/em>. Nom\u00e9s admetem xiquets als apartaments.<br><br><strong>P: Tamb\u00e9 \u00e9s pet friendly.<\/strong><br><br>R: \u00c9s una veta de mercat superimportant. En aix\u00f2 hem sigut pioners. Hi ha m\u00e9s mascotes a Espanya que xiquets! Abans nom\u00e9s eren estrangers els qui viatjaven amb mascotes, ara cada vegada \u00e9s m\u00e9s habitual que hi haja gent que viatge amb elles. Solen estar molt ben cuidades.<br><br><strong>P: Pregunta inevitable. Com ha anat la temporada?<\/strong><br><br>R: \u00c9s un bon any per al turisme a Espanya i en aquesta zona. Les onades de calor han influ\u00eft negativament en el consum, a les terrasses, que en algunes hores estaven desertes. Ha sigut un estiu pesat. Per\u00f2 malgrat aix\u00f2, ha sigut una temporada bona.<br><br><strong>P: Hi ha hagut anul\u00b7lacions per la calor?<\/strong><br><br>R: No, no, ja se suposa que ac\u00ed far\u00e0 calor. Tenim la mar al costat i sempre hi ha brises, \u00e9s un regulador i la fa m\u00e9s suportable. La gent ho sap. Aquest mes acabar\u00e0 molt b\u00e9, no hi ha hagut cap temporal de fi d&#8217;agost i la gent ha continuat venint. Des de fa uns anys s&#8217;observa que setembre \u00e9s quasi millor que juliol. Segons les enquestes que hem fet als nostres associats, maig i juny han sigut en 2025 millors que l&#8217;any passat. Juliol pr\u00e0cticament igual i agost, b\u00e9, molt b\u00e9. La despesa mitjana si que ha baixat. Les estades a l&#8217;agost s\u00f3n molt cares i la gent redueix despeses, aix\u00f2 es nota en els tiquets. Per\u00f2 els restaurants de m\u00e9s categoria no ho han notat, han treballat molt b\u00e9. \u00c9s cert tamb\u00e9, i eixa ser\u00e0 la tend\u00e8ncia, que els restaurants redueixen horaris i que hi ha un dia lliure o fix de tancament, sobretot en els familiars. Ac\u00ed venen molts turistes que tenen apartament o segona resid\u00e8ncia i ixen molt a menjar. La gent que ve gaudeix molt de la gastronomia i no deixa de ser un pilar fonamental que no deixem de fomentar.<br><br><strong>P: En quatre dies ja tenim ah\u00ed el D*na.<\/strong><br><br>R: Ja est\u00e0 pr\u00e0cticament tot organitzat. A principis de setembre es presentar\u00e0 a D\u00e9nia i a Val\u00e8ncia i comptem amb tots els cuiners que Quique Dacosta ha anat convocant i que tenen una repercussi\u00f3 medi\u00e0tica. En la licitaci\u00f3 dels llocs hi ha hagut molt bona resposta, s&#8217;han omplert de seguida.<br><br><strong>P: El model del festival t\u00e9 futur?<\/strong><br><br>R: S\u00ed, la gent t\u00e9 un bon record i \u00e9s en una data molt encertada.<br><br><strong>P: Amb quins projectes va assumir la presid\u00e8ncia?<\/strong><br><br>R: La traject\u00f2ria de l&#8217;associaci\u00f3 ja est\u00e0 marcada i seguirem amb l&#8217;itinerari d&#8217;activitats de l&#8217;any. Un dels reptes que ten\u00edem era donar un altre aire a la junta directiva. Passen els anys i s&#8217;ha de sumar gent d&#8217;altres generacions per a donar-li continu\u00eftat. Potser eixe \u00e9s el gran canvi, tenim membres m\u00e9s joves que s\u00f3n segona o tercera generaci\u00f3 de fam\u00edlies hostaleres de D\u00e9nia o de la comarca. I per descomptat volem augmentar el nombre de socis. Quasi som 400 i hi ha molts m\u00e9s establiments que es poden associar a la comarca.<br><br><strong>P: Molts bars i restaurants.<\/strong><br><br>R: S\u00ed. Per\u00f2 el sector \u00e9s cada vegada m\u00e9s professional. Obrir un local ja no \u00e9s una aventura, \u00e9s una cosa seriosa on u s&#8217;est\u00e0 jugant molt. El nombre de visitants continua creixent, per\u00f2 els costos del sector han augmentat molt\u00edssim\u2026 personal, mat\u00e8ria primera, Seguretat Social, la pressi\u00f3 fiscal, la normativa\u2026 T&#8217;ho has de pensar b\u00e9. Crec que la base de l&#8217;\u00e8xit \u00e9s la professionalitat. Cal estar a l&#8217;altura o, per contra, pots anar a tancament. En hotels, per exemple, els preus han pujat molt i en canvi la rendibilitat ha baixat, en el sector en general. En restauraci\u00f3 parlem d&#8217;una rendibilitat que va del 2 al 7%, quan fa potser cinc anys est\u00e0vem parlant del doble. Per aix\u00f2 no es poden donar pals a cegues. Un restaurant contracta un cambrer de m\u00e9s i s&#8217;est\u00e0 jugant tindre o no tindre beneficis.<br><br><strong>P: El Cdt i el centre de formaci\u00f3 professional s\u00f3n pilars b\u00e0sics per a la formaci\u00f3?<\/strong><br><br>R: Hauria d&#8217;haver-hi m\u00e9s alumnes. Ac\u00ed tenim el factor de l&#8217;emigraci\u00f3, que \u00e9s fonamental. Nom\u00e9s has de mirar les persones que hi ha en cuina i quines estan servint. Aix\u00f2 \u00e9s una realitat. I a vegades no s&#8217;exigeix el que s&#8217;hauria d&#8217;exigir. Per\u00f2 cal fomentar la formaci\u00f3 i la seguretat. Mira si es donen menjars al llarg de l&#8217;any! Donem productes molt delicats i amb temperatures molt altes. Estem trencant molt l&#8217;estacionalitat, es percep als carrers. Els residents d&#8217;hivern ara no estan. La col\u00f2nia internacional que viu ac\u00ed molts mesos o lloga per a dos o tres mesos tornar\u00e0 en un mes o mes i mig. I ells tamb\u00e9 mobilitzen el sector i requereixen serveis. Tamb\u00e9 m\u00e8dics i hospitalaris. I no deixem de costat la seguretat. D\u00e9nia \u00e9s una ciutat molt segura ara com ara i aix\u00f2 \u00e9s de valorar.<br><br><strong>P: Vivim del turisme, per\u00f2 vivim per al turisme?<\/strong><br><br>R: D\u00e9nia ha de ser una ciutat molt amigable per a les persones que vivim en ella, siguen o no turistes. Si aconseguim que siga una ciutat bonica, c\u00f2moda, segura amb bons serveis, \u00e9s quan es converteix en una cosa atraient, com una flor a la qual venen les abelles. Per\u00f2 primer has de cuidar aix\u00f2 i no oblidar-te de les persones que viuen ac\u00ed. No m&#8217;agradaria mai que D\u00e9nia es convertira en un dest\u00ed on els d&#8217;ac\u00ed diguem \u2018jo a l&#8217;estiu no vull estar ac\u00ed\u2019.<br><br><strong>P: La turistificaci\u00f3 i la gentrificaci\u00f3, de les quals tant es parla, poden acabar amb eixe atractiu que actua com a reclam. <\/strong><br><br>R: Per aix\u00f2 hem d&#8217;estar molt damunt. El turisme a D\u00e9nia, i a la comarca, no \u00e9s un fenomen nou. Jo porte vivint d&#8217;ell fa 50 anys i sempre ha vingut molta gent. Mentre no canvie el model de vacances a l&#8217;agost, el que ocorre al ple de l\u2019estiu no ho podrem controlar. Per\u00f2 la gent \u00e9s ja cada vegada m\u00e9s conscient que hi ha altres \u00e8poques de l&#8217;any per a anar de vacances i les fragmenta cada vegada m\u00e9s. Aix\u00f2 l&#8217;estranger ho sap des de fa molt temps.<br><br><strong>P: No estarem esgotant la gallina dels ous d&#8217;or?<\/strong><br><br>R: Hem d&#8217;estar atents i abans d&#8217;arribar ah\u00ed adoptar mesures. Ac\u00ed ja s&#8217;ha fet. S&#8217;han posat aparcaments en les cales o accessos per als vianants. Cal planificar. Seria trist morir d&#8217;\u00e8xit. Al final, crec que la bellesa i l&#8217;entorn superen tot aix\u00f2. Els capvespres i les albes ac\u00ed s\u00f3n distints.<br><br><strong>P: Som conscients del ric patrimoni gastron\u00f2mic que tenim?<\/strong><br><br>R: S\u00ed. Des que es va nomenar D\u00e9nia ciutat creativa de la gastronomia s&#8217;ha apostat per eixe pilar i est\u00e0 donant molts fruits. La gent ho valora i els que tenen un establiment es calfen el cap per a les tapes, Madrid Fusi\u00f3n, el D*na\u2026 Tenim un viver de professionals als quals tirar m\u00e0.<br><br><strong>P: La creativitat i la imaginaci\u00f3 es noten. Per\u00f2 qu\u00e8 passa amb la cuina de sempre, les tapes i el receptari tradicionals?<\/strong><br><br>R: Sempre hi haur\u00e0 defensors d&#8217;eixe producte. Hi ha establiments que inverteixen molt temps i esfor\u00e7 a mantindre-lo. Jornades de tomaca, de salaons, embotit\u2026 Tot aix\u00f2 no es perdr\u00e0. Al contrari, s&#8217;ha aconseguit donar-li valor. \u00c9s un patrimoni de tots que hem de celebrar i que s&#8217;ha de mantindre. El saber fer de les cuineres d&#8217;abans s&#8217;ha de traslladar a llibres de cuina, receptaris\u2026 algunes falles ja els han fets.<br><br><strong>P: \u00c9s la segona dona que presideix l&#8217;associaci\u00f3 i la segona presidenta propiet\u00e0ria d&#8217;hotel. Casualitat?<\/strong><br><br>R: S\u00ed. Potser en el negoci d&#8217;apartaments i hotels sempre hi ha hagut dones al capdavant. T\u00e9 molt a veure amb el manteniment, l&#8217;organitzaci\u00f3, la neteja\u2026 I tamb\u00e9 en les cuines. Quantes dones que estaven en l&#8217;ombra han estat sustentant negocis! L&#8217;homenatge que se&#8217;ls va fer va ser molt bonic i necessari.<br><br><strong>P: Una altra dona que \u00e9s \u00e0nima de l&#8217;associaci\u00f3. Qu\u00e8 seria d\u2019AEHTMA sense Reme Cerd\u00e0?<\/strong><br><br>R: El seu comprom\u00eds \u00e9s sabut per tots. Ella \u00e9s garantia, porta ac\u00ed implicada tota la vida. Jo em vaig llan\u00e7ar amb la condici\u00f3 que estiguera ella. Per\u00f2 tamb\u00e9 hem de preparar el moment en qu\u00e8 no estiga. Fa molt que he apr\u00e9s a delegar. He fet molta formaci\u00f3 en el CdT. Soc llicenciada en Dret i tota la meua formaci\u00f3 tur\u00edstica ve d&#8217;all\u00ed. Ha sigut per a mi una font de formaci\u00f3 i de nodrir-me com a empres\u00e0ria que sempre agrair\u00e9. Per aix\u00f2 valore molt\u00edssim la formaci\u00f3. En eixos cursos he apr\u00e9s a delegar. Un empresari no pot estar fent tot el dia d&#8217;home orquestra, gestionar-ho tot. Cal saber delegar i envoltar-se de bons equips, que potser \u00e9s el m\u00e9s complicat, i buscar sempre un espai per a, com vaig aprendre en un curs, esmolar la serra.<br><br><strong>P: \u00c9s m\u00e9s de muntanya o de platja?<\/strong><br><br>R: De platja. Per\u00f2 el tema de la calor ha fet que m&#8217;escape sempre algun dia a la muntanya. Faig moltes rutes per la comarca a l&#8217;hivern amb bons amics que les organitzen i a l&#8217;estiu m&#8217;agrada anar als Pirineus, que fa m\u00e9s frescoreta.<br><br><strong>P: Un plat de la gastronomia de la Marina Alta.<\/strong><br><br>R: Les tellines m&#8217;encanten. Un bon arr\u00f2s i els peixos.<br><br><strong>P: Per a estar al capdavant d&#8217;un hotel ha de ser necess\u00e0ria molta empatia.<\/strong><br><br>R: El 90 per cent de la gent \u00e9s molt bonica. Caldria premiar al que \u00e9s fidel, al qual somriu tots els dies i no al que es queixa. Jo sempre he donat gr\u00e0cies de treballar en aquest sector. La gent ve amb la seua millor energia, el que vol \u00e9s percebre que tu vols fer-los agradable el que per a ells \u00e9s el seu temps m\u00e9s preuat de l&#8217;any. Per aix\u00f2 \u00e9s important un bon acolliment, que estiguen segurs, que confien. El teu treball \u00e9s fer que eixe moment siga especial. I aix\u00f2 dona molta satisfacci\u00f3.<br><br><strong>P: Els clients demanen molts consells?<\/strong><br><br>R: S\u00ed. Els agrada el consell del local.
