{"id":58749,"date":"2025-02-07T18:33:32","date_gmt":"2025-02-07T17:33:32","guid":{"rendered":"https:\/\/canfali.com\/el-sequer-tradicin-autenticidad\/"},"modified":"2025-02-07T18:33:32","modified_gmt":"2025-02-07T17:33:32","slug":"el-sequer-tradicin-autenticidad","status":"publish","type":"post","link":"https:\/\/canfali.com\/ca-es\/el-sequer-tradicin-autenticidad\/","title":{"rendered":"El Sequer, tradici\u00f3 i autenticitat"},"content":{"rendered":"<p>Torna <em>Casa Meua &eacute;s Casa Teua<\/em>, el programa amb el qual Els Magazinos vol homenatjar els restaurants hist&ograve;rics i les fam&iacute;lies que han treballat per a dotar de personalitat la gastronomia de la Marian Alta i mantenir els sabors de sempre en la nostra mem&ograve;ria i en el nostre paladar. La nova temporada s&#39;ha obert a Jes&uacute;s Pobre, en el Restaurant El Sequer i, com sempre, de la m&agrave; de Cervesa T&uacute;ria. Ho ha fet en una data molt especial per a la fam&iacute;lia Forn&eacute;s-Alberola, quan es compleixen 25 anys de la inauguraci&oacute; d&#39;un establiment que ha sabut obrir-se mercat mantenint la tradici&oacute; i sent fidel als principis d&#39;autenticitat i comprom&iacute;s amb el territori. Per al sopar del 10 de febrer es servir&agrave; una selecci&oacute; de tapes i plats de la cuina d&#39;un restaurant que s&#39;ha guanyat una clientela fidel i ha fet del producte fresc i el tracte familiar la seva principal bandera.<\/p>\n<p>L&#39;aventura del Sequer va comen&ccedil;ar amb el canvi de segle. O amb el canvi de mil&middot;lenni, segons com es mire. El restaurant va obrir les seves portes l&#39;any 2000 en el Carrer Major de Jes&uacute;s Pobre. Al capdavant del negoci, Jos&eacute; Jaime Forn&eacute;s i Maite Alberola donaven un gir a les seves vides. No eren nous en aix&ograve; de l&#39;hostaleria. Ell havia regentat una cafeteria a X&agrave;bia durant sis anys i la seva esposa, que va treballar amb ell durant este temps, havia crescut entre taules i fogons. Els seus pares regentaven el Bar Pedro, un cl&agrave;ssic de Jes&uacute;s Pobre on es va adobar en l&#39;ofici.<\/p>\n<p>Aventurar-se amb un restaurant en una poblaci&oacute; menuda que ja tenia dos bars de renom que s&#39;havien guanyat una clientela fixa comportava un risc que la parella va assumir pensant en el b&eacute; de la fam&iacute;lia. Els fills eren menuts i treballar lluny de casa no era per a ells la millor opci&oacute;. Havien reformat l&#39;habitatge familiar i la planta baixa estava buida. Van veure en aix&ograve; l&#39;oportunitat de convertir-la en un restaurant i obrir-se un nou cam&iacute;. I ho van fer sense perdre de vista les seves arrels, sense oblidar d&#39;on venien i com s&#39;havien criat. Li posarien El Sequer, un nom lligat a les tasques del camp i a l&#39;elaboraci&oacute; de la pansa. Perqu&egrave; all&iacute;, al costat de la casa dels iaios de Jos&eacute; Jaime, s&#39;assecava i s&#39;escaldava el ra&iuml;m. Per all&iacute; va rondar ell en la seva infantesa i all&iacute;, encara hui, la fam&iacute;lia escampa els canyissos al sol al final de l&#39;estiu perqu&egrave; els clients, si no els ha quedat clar amb les fotografies que pengen de les parets, coneguen una mica m&eacute;s de la hist&ograve;ria de Jes&uacute;s Pobre.<\/p>\n<p>&lsquo;Samarretes&rsquo; i &lsquo;cromos&rsquo; amb escenes costumistes que s&#39;utilitzaven en les caixes de pansa formen tamb&eacute; part de la decoraci&oacute;. Els cartells del Concurs de Vins del Terreny -que per cert, el 15 de febrer celebra la seva XVIII edici&oacute;- delaten tamb&eacute; la inclinaci&oacute; de la fam&iacute;lia per les tradicions i la seva implicaci&oacute; en tot el que se celebra en Jes&uacute;s Pobre. Han participat en el certamen amb els seus propis vins. Ara ja no ho fan per&ograve; patrocinem, com tantes altres activitats que s&#39;organitzen des de l&#39;ampli teixit social de la poblaci&oacute;.<\/p>\n<p>Que &ldquo;Jes&uacute;s Pobre est&agrave; de moda&rdquo;, com diu Jordi, no ho pot negar ning&uacute;. &Eacute;s un dels fills del matrimoni i qui ha heretat el gust per la restauraci&oacute;. &ldquo;No s&eacute; fer una altra cosa&rdquo;, explica. De menut, no li importava aixecar-se d&#39;hora per a acompanyar al seu pare a la cafeteria a X&agrave;bia i va ajudar sempre en el restaurant quan van obrir. &ldquo;A mi sempre m&#39;ha agradat&rdquo;, confessa, &ldquo;i este &eacute;s un ofici que t&#39;ha d&#39;agradar, perqu&egrave; &eacute;s molt esclau, amb horaris molt complicats&rdquo;. Ara est&agrave; al capdavant del servei i &eacute;s conscient de la import&agrave;ncia d&#39;un ofici, el seu, al qual no sempre se li ha donat el reconeixement que es mereix. Perqu&egrave; el cambrer, precisa, &ldquo;ha de tenir sempre bon humor i tractar b&eacute; a la gent&rdquo;. &ldquo;Avui dia hi ha molt on triar, has de saber posar-te en el lloc dels altres i intentar que se&rsquo;n vagen contents&rdquo;, afegeix Jordi.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>La barbacoa<\/strong><\/p>\n<p>Els arrossos s&oacute;n un dels principals reclams del Sequer, molts d&#39;ells elaborats amb una base de peix -com el de cigales i rap o l&rsquo;arr&ograve;s negre- i altres amb productes de l&#39;horta, com la paella de carn i verdures o el putxero que preparen tots els dissabtes a l&#39;hivern. Per&ograve; no sols d&#39;arrossos viu l&#39;home. I en El Sequer ho saben. Per aix&ograve;, el peix fresc portat de les llotges de X&agrave;bia i de D&eacute;nia i la carn a la brasa ocupen un lloc destacat en la carta, on conviuen amb embotits, coques de dacsa i tapes t&iacute;piques de la cuina de la Marina Alta. Sense oblidar les delicioses postres casolanes que se serveixen per a arrodonir el men&uacute;.<\/p>\n<p>Com a molts altres, la covid els va obligar buscar noves oportunitats de negoci. Van muntar llavors la barbacoa a la terrassa, des d&#39;on encara s&#39;albira la part alta del Montg&oacute;. &Eacute;s, sens dubte, un atractiu m&eacute;s per a gaudir de les nits d&#39;estiu al voltant de la taula, amb bons vins -en una carta que no arrisca per&ograve; en la qual es poden trobar bones refer&egrave;ncies que satisfaguen el paladar, algunes d&#39;elles de la comarca- i amb la tranquil&middot;litat de qu&egrave; es gaudeix durant tot l&#39;any en Jes&uacute;s Pobre. Bo, excepte els diumenges, quan els seus carrers es converteixen en un anar i vindre de gent atreta pel Mercat del Riurau o per alguna de les moltes activitats que s&#39;organitzen al llarg de l&#39;any. D&#39;aix&ograve;, reconeix el jove, es beneficia tamb&eacute; l&#39;hostaleria local.<\/p>\n<p>El Sequer es nodreix d&#39;una clientela fidel dels pobles del voltant, que sap al que va, i amb forasters que repeteixen un any darrere l&#39;altre. El producte fresc i de temporada -a vegades arribat directament de l&#39;horta familiar- i els plats de la cuina tradicional defineixen una oferta sense m&eacute;s pretensions que la de ser fidel a les arrels i a l&#39;aut&egrave;ntic.
