M&eacute;s que res perqu&egrave;, segons diuen els estudis, cada vegada hi ha m&eacute;s gent diagnosticada i molta altra que pateix la malaltia sense saber-ho. Per&ograve;, com &eacute;s aix&ograve; de viure sense gluten? Hem preguntat a tota una &ldquo;experta&rdquo;, Cristina Cabrera Forn&eacute;s, de Pedreguer, perqu&egrave; porta tota la vida amb aix&ograve; i no coneix una altra cosa que no siga ser cel&iacute;aca. I no &eacute;s una frase feta sin&oacute; literal. Quan va comen&ccedil;ar a prendre les farinetes de cereals es va posar dolenta i aqu&iacute; va comen&ccedil;ar el seu viatge per aquest m&oacute;n. Als 16 mesos se li va diagnosticar la malaltia i els seus pares van contactar immediatament amb la Federaci&oacute; d&#39;Associacions de Cel&iacute;acs per a saber qu&egrave; fer. &ldquo;M&#39;he interessat pel tema en comptes d&#39;avorrir-lo&rdquo;, diu. I tant perqu&egrave;, de fet, ha estudiat Ci&egrave;ncies i Tecnologia dels Aliments i ara treballa en aquest camp. Si no pots amb el teu enemic, uneix-te a ell, segons resa el refrany.<\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Cristina est&agrave; a punt de complir la trentena i recorda que &ldquo;em vaig passar tota la inf&agrave;ncia mirant ingredients en les etiquetes dels aliments&rdquo;. I elaborant el pa a casa amb una farina de blat de moro que, en aquells dies, els seus pares compraven directament d&#39;un mol&iacute; de Saragossa. Una farina, per cert, que ara est&agrave; descatalogada i &ldquo;he trobat una similar per&ograve; el quilo val 4,71 euros, quatre vegades m&eacute;s cara del que costa una farina convencional&rdquo;, subratlla. &ldquo;Les dues &uacute;ltimes vegades que he fet pa&rdquo;, afegeix, &ldquo;m&#39;ha sortit malament i no s&eacute; quina &eacute;s la ra&oacute;&rdquo;.<\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; De xicoteta era la &ldquo;rara&rdquo; del grup d&#39;amigues perqu&egrave; no podia menjar el t&iacute;pic sandvitx de nocilla de les festes d&#39;aniversaris. &ldquo;Em van explicar qu&egrave; era aquesta malaltia i ho tenia molt clar. &Eacute;s cert que et marca una mica la teva manera de ser i de relacionar-te, per&ograve; no queda una altra&rdquo;, assegura Cris. Ara les seves amigues s&#39;acoblen a ella &ldquo;i, quan anem per ah&iacute;, demanen coses que jo puc menjar&rdquo;. I ocorre el mateix a casa, ja que la seva fam&iacute;lia conviu -mai m&eacute;s ben dit- amb aquesta patologia que ja &eacute;s quotidianitat.<\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Abans d&#39;anar a menjar o sopar amb la fam&iacute;lia o els amics, Cristina mira la carta per a assegurar-se que pot demanar alguna cosa. I quan va al supermercat no pot triar el primer que veu. &ldquo;S&iacute; que est&agrave;s condicionada per&ograve; una altra cosa &eacute;s que t&#39;acostumes a viure aix&iacute; i per a mi all&ograve; estrany seria que hagu&eacute;s de canviar ara&rdquo;, subratlla. &ldquo;Si pogu&eacute;s menjar de tot&quot;, continua, &ldquo;no sabria com fer-ho&rdquo;. Fa unes setmanes es va despla&ccedil;ar fins a la Vila Joiosa perqu&egrave; va descobrir un restaurant 100% per a cel&iacute;acs &ldquo;i all&ograve; &eacute;s el parad&iacute;s&rdquo;.<\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Segons el seu testimoniatge, ara hi ha molts m&eacute;s productes sense gluten en els supermercats i, a m&eacute;s, els pots comprar per internet, ja que t&#39;ofereixen facilitats i t&#39;estalvies les despeses d&#39;enviament si passes d&#39;una certa quantitat d&#39;euros. &ldquo;Trobar-los &eacute;s f&agrave;cil per&ograve;, ara b&eacute;, que t&#39;agraden ja &eacute;s una altra cosa&rdquo;, matisa. Hi ha m&eacute;s oferta, s&iacute;, per&ograve; els productes sense gl&uacute;tens -cereals, galetes, coques, gelats, etc.- solen ser m&eacute;s cars i aix&ograve; &eacute;s un inconvenient. &ldquo;La veritat &eacute;s que no em fixo en els preus perqu&egrave;, si no, no menges&rdquo;, diu.<\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Les postres s&oacute;n el major handicap perqu&egrave; no sol haver-hi en els restaurants i t&#39;ofereixen fruita &ldquo;que puc menjar-la a casa&rdquo;. Trobar un forn o una botiga especialitzada al 100% en productes sense gl&uacute;tens no &eacute;s gens f&agrave;cil &ldquo;perqu&egrave; duren poc temps obertes, ja que no hi ha tants clients i, a m&eacute;s, els productes, com he dit, s&oacute;n m&eacute;s cars perqu&egrave; la mat&egrave;ria primera tamb&eacute; ho &eacute;s i, a m&eacute;s, &eacute;s m&eacute;s dif&iacute;cil de treballar&rdquo;, segons indica.<\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; El desdejuni no &eacute;s un problema perqu&egrave; hi ha els mateixos productes amb i sense gl&uacute;tens. Per al menjar i el sopar, la dieta mediterr&agrave;nia &eacute;s adequada perqu&egrave; es basa en verdures, llegums, carn, peix&hellip;. &ldquo;&Eacute;s cert que tot ha evolucionat molt&rdquo;, comenta Cris, &ldquo;i ara la pasta sense gluten est&agrave; molt bona perqu&egrave; hi ha m&eacute;s compet&egrave;ncia&rdquo;. Quan viatja, &ldquo;la meitat de la maleta &eacute;s per a roba i l&#39;altra per a menjar per si de cas on vaig no tinc el que puc menjar&rdquo;. La ciutat en la qual m&eacute;s ha gaudit, en aquest sentit, ha estat Sant Sebasti&agrave; -amb els seus famosos pinxos- i la que menys Brussel&middot;les. A D&eacute;nia t&eacute; localitzat un restaurant en el qual el 90% de la carta &eacute;s apta per a cel&iacute;acs.<\/p>\n<p>&nbsp;<\/p>\n<p>DEU NORMES B&Agrave;SIQUES EN UNA DIETA<\/p>\n<p>&nbsp;<\/p>\n<p>L&#39;Associaci&oacute; de Cel&iacute;acs de la Comunitat Valenciana (ACECOVA) dona deu normes b&agrave;siques per a fer una dieta sense gluten. La primera &eacute;s que no deu mai iniciar-se sense un diagn&ograve;stic complet que la certifique. Un dels majors errors &eacute;s la prescripci&oacute; de la dieta per la simple sospita d&#39;intoler&agrave;ncia al gluten o per un resultat positiu en la detecci&oacute; d&#39;anticossos espec&iacute;fics. En cas de diagn&ograve;stic de malaltia cel&iacute;aca, l&#39;&uacute;nic tractament possible &eacute;s una dieta estricta sense gluten per a tota la vida. Cal eliminar qualsevol producte que porte entre els seus ingredients blat, ordi, s&egrave;gol, espelta, blat khorasan, triticale i civada, aix&iacute; com els seus productes derivats, &eacute;s a dir, farina, pasta alimentosa, pa, brioixeria, etc.<\/p>\n<p>La dieta ha de basar-se en aliments naturals que no continguen gl&uacute;tens, lactis, carns, peixos, fruites, verdures, ous, llegums i cereals permesos (arr&ograve;s, blat de moro, mill i sorgo, per&ograve; sempre en la seva forma sencera). I cal tenir en compte que els productes derivats dels cereals permesos s&oacute;n de risc a causa de les contaminacions que poden produir-se durant el seu proc&eacute;s d&#39;elaboraci&oacute;. Qualsevol producte manufacturat pot ser susceptible de portar gluten i no es recomana el consum de productes a granel i\/o sense etiquetar.<\/p>\n<p>Una altra recomanaci&oacute; &eacute;s tenir precauci&oacute; amb els aliments importats, ja que un fabricant pot emprar diferents mat&egrave;ries primeres (susceptibles o no de contenir gl&uacute;tens) per a un producte amb la mateixa marca comercial. No s&#39;han de consumir productes etiquetats amb la declaraci&oacute; &ldquo;molt baix en gluten&rdquo; perqu&egrave; contenen entre 20 i 100 ppm de gluten.
