Diuen que &eacute;s el vi ideal per a quan arriba el bon temps, un vi de primavera que marida b&eacute; amb arrossos, carns i peixos. Hi ha qui recorre a ell durant tot l&#39;any, qui prefereix prendre&#39;l d&#39;aperitiu i tamb&eacute; qui el beuria a qualsevol hora. Aix&iacute; i tot, els rosats ocupen moltes menys l&iacute;nies en les cartes de vins dels restaurants i pocs prestatges en cellers i supermercats espanyols. S&oacute;n, com afirmen alguns viticultors, un tresor per descobrir. I ac&iacute;, a la Marina Alta, comen&ccedil;a tamb&eacute; a parlar-se d&#39;ells.<\/p>\n<p>El vi rosat s&#39;elabora amb ra&iuml;m negre per&ograve; de forma molt semblant al blanc. El seu color dep&eacute;n del temps que estiga en contacte amb les pells del ra&iuml;m durant el per&iacute;ode de maceraci&oacute;. A m&eacute;s temps, m&eacute;s fosc ser&agrave; el seu color. Per tant, i a difer&egrave;ncia del negre, requereix de maceracions curtes.&nbsp;<\/p>\n<p>Espanya &eacute;s el segon productor mundial de rosats, per darrere de Fran&ccedil;a, per&ograve; no el segon pa&iacute;s consumidor. En 2019 ocupava el sis&eacute; lloc en consum, malgrat produir una cinquena part del vi rosat que es consumia en el m&oacute;n. Aix&ograve; es deu tal vegada al fet que &eacute;s un vi subestimat i que deu la seua &lsquo;mala fama&rsquo; a diversos factors.&nbsp;<\/p>\n<p>Manu Guardiola, en&ograve;leg i viticultor, parla d&#39;un estigma derivat de la mala praxi de mesclar ra&iuml;m negre i blanca. Durant algun temps, ha sigut pr&agrave;ctica habitual afegir a un blanc com&uacute; una mica de negre per a obtindre un rosat. &Eacute;s &ldquo;el que en realitat dir&iacute;em un claret&rdquo;, explica el cellerer. Un rosat, remarca, s&#39;obt&eacute; de ra&iuml;m negre i no &eacute;s m&eacute;s que un vi negre sense tot just maceraci&oacute;, &ldquo;amb les hores suficients per a obtindre el color i tan digne com el negre&rdquo;. Es confessa un apassionat dels rosats, &ldquo;per aix&ograve; els faig&rdquo;, diu, i est&agrave; conven&ccedil;ut que si es donaren a provar en una copa on no s&#39;apreciara el color, la gent no seria tan poc inclinada a beure&#39;ls. &ldquo;Alguns pensarien que es tracta d&#39;un blanc i fins i tot d&#39;un negre jove, amb poca estructura&rdquo;, assenyala, &ldquo;se sorprendrien&rdquo;.<\/p>\n<p>Sobre l&#39;etiqueta de &ldquo;de segona fila&rdquo; pes tamb&eacute; el fet que moltes vegades, a fi de descarregar els ceps o simplement donar-li eixida, el ra&iuml;m que no oferia la qualitat suficient per a un negre es destinava a l&#39;elaboraci&oacute; de rosats. La qualitat del vi per tant deixava molt a desitjar. Res a veure amb les joves micro-vinyes que han aflorant a la comarca, que busquen abans de res qualitat. Aida Cisnal i Luis Serra elaboren el rosat Ou Yea. &Eacute;s el ra&iuml;m que utilitzen la que confereix frescor el seu vi i ho fa m&eacute;s delicat. &ldquo;&Eacute;s un ra&iuml;m de qualitat, com la que utilitzem per a elaborar el blanc o el negre, i tamb&eacute; el preu&rdquo;, precisa Aida.&nbsp;<\/p>\n<p>Despr&eacute;s de la guerra, en anys de pen&uacute;ria econ&ograve;mica, va haver-hi un temps en qu&egrave; el quilo de ra&iuml;m es pagava per graus d&#39;alcohol o kilogrados, que era el que tenia eixida a Europa. Es va deixar de costat la producci&oacute; de ra&iuml;m que no donaven graduaci&oacute; i l&#39;elaboraci&oacute; de vins que no donaven diners, com el rosat, comenta Mara Ba&ntilde;&oacute;, del Celler Els Freses. Afortunadament, postil&middot;la, &ldquo;la visi&oacute; que es tenia dels rosats ha canviat en els &uacute;ltims 15 anys i els que es fan ara poden estar al mateix nivell que els altres&rdquo;. El seu celler de Jes&uacute;s Pobre t&eacute; previst traure al mercat l&#39;any que ve el Rosa, elaborat amb ra&iuml;m moscatell negra, &ldquo;una varietat menys comuna, per&ograve; amb la qual tamb&eacute; &eacute;s possible fer bons vins&rdquo;.<\/p>\n<p>Els rosats de Manu Guardiola Viticultor i d&#39;Aida i Luis Vinyaters s&oacute;n tamb&eacute; monovarietales. Tots dos cellers, situades a Xal&oacute;, utilitzen per a la seua elaboraci&oacute; el ra&iuml;m va girar, aut&ograve;ctona de la Marina Alta. Els Marges Rosat, com el blanc, subratlla Guardiola, pret&eacute;n ser un vi amb personalitat, &ldquo;amb sabor, que et diga alguna cosa&rdquo;. Un vi, com ell diu, &ldquo;que estiga a l&#39;altura del que et menges&rdquo;. No li val amb un rosat que acompanye, perqu&egrave; es corre el perill que els plats -mai m&eacute;s ben dit- es mengen el sabor del vi. Per fortuna, afig, &ldquo;els xicotets cellers de la comarca fem vins artesanals, m&eacute;s saborosos, m&eacute;s gastron&ograve;mics, amb una mica m&eacute;s d&#39;estructura, i que donen m&eacute;s joc en la restauraci&oacute;&rdquo;. Encara que l&#39;elaboraci&oacute; de vi per a l&#39;autoconsum li ve d&#39;anys arrere, va obrir el seu celler en 2018, com ho van fer tamb&eacute; Aida i Luis. En el cas de Manu la producci&oacute; de negre i blanc &eacute;s major, &ldquo;per&ograve; el rosat va tenint eixida i a poc a poc m&eacute;s demanda&rdquo;, amb el que es dona per satisfet. Destaca els diferents microclimes que et pots trobar en pocs quil&ograve;metres dins de la Marina Alta. Per al seu rosat, utilitza el va girar de les vinyes de les partides Solana i Pasula de Xal&oacute;, &ldquo;terra calc&agrave;ria, blanca, en el primer cas i m&eacute;s vermellosa i f&egrave;rrica en el segon, la qual cosa li dona tocs m&eacute;s llaminers&rdquo;.<\/p>\n<p>Aida i Luis han corregut m&oacute;n amb aix&ograve; del vi. Tots dos s&oacute;n enginyers agr&ograve;noms, a m&eacute;s d&#39;en&ograve;legs i ara viticultors, i han treballat per a diferents tipus de cellers a Nova Zelanda, Fran&ccedil;a, Espanya i els Estats Units. Els seus s&oacute;n vins de m&iacute;nima intervenci&oacute; que intenten reflectir la identitat de la Marina Alta, buscant els microclimes m&eacute;s idonis per a cada varietat i cada elaboraci&oacute;. El ra&iuml;m va girar que utilitzen per al rosat, procedeix tamb&eacute; de la Solana i La Pasula. Aida lamenta que a Espanya, a difer&egrave;ncia de pa&iuml;sos com Fran&ccedil;a, hi haja poca cultura del rosat, &ldquo;un vi molt vers&agrave;til que et pots beure en qualsevol &egrave;poca de l&#39;any, no sols a l&#39;estiu&rdquo;. Ella aconsella servir-ho a una temperatura d&#39;11 graus, no tan fred com s&#39;acostuma, per a apreciar els matisos. Ara b&eacute;, en ple estiu cal evitar que se&#39;ns calfe en la taula i, per el, tant el millor &eacute;s mantindre-ho refrigerat en una gla&ccedil;onera amb aigua i gel mentre ho bevem.<\/p>\n<p>Sobre la vida &uacute;til dels rosats, la viticultora explica que dep&eacute;n de la seua elaboraci&oacute;. &ldquo;Nosaltres no filtrem ni aclarim, els PH s&oacute;n molt baixos i per tant aguanta molt b&eacute; el pas del temps&rdquo;, precisa. &ldquo;Si ho has treballat b&eacute;&rdquo;, afig, &ldquo;la vida d&#39;un vi rosat ser&agrave; m&eacute;s llarga.&nbsp;<\/p>\n<p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp;&#8212;&#8212;-<\/p>\n<p>Afirmar que els negres no casen amb peixos i mariscos o que els blancs no van b&eacute; amb les carns &eacute;s un atreviment. Hi ha una norma v&agrave;lida, per&ograve; no excloent, que diu que peixos i mariscos s&#39;han d&#39;acompanyar amb vi blanc i la carn amb vi negre. I qu&egrave; passa amb els rosats? Una vegada m&eacute;s s&oacute;n els grans oblidats.&nbsp;<\/p>\n<p>A l&#39;hora de maridar un vi hem de tindre present que tant el vi com el plat han de mantindre la seua personalitat, el seu car&agrave;cter. No totes les carns s&oacute;n iguals ni tots els peixos tampoc. I evidentment, no tots els vins blancs s&oacute;n iguals ni tots els negres tampoc. Pensem que no ser&agrave; el mateix triar un vi per a acompanyar una cua de bou que per a un pit de pollastre; ni tampoc per a un filet de llu&ccedil; o per a una tonyina a la planxa. Cal buscar un equilibri de sabors, intensitats i matisos, de manera que puguem assaborir i paladear el plat i el vi.<\/p>\n<p>Hem preguntat a Aida Cisnal i Manu Guardiola per les seues prefer&egrave;ncies a l&#39;hora de maridar els rosats. Van b&eacute; amb corder, amb marisc, amb arrossos i amb menjars picants, diu ella. Poden ser perfectes per a arrossos, com les paelles mixtes, sobrassada i aperitius, assegura ell. Cert &eacute;s que aquest &eacute;s el temps perfecte per a provar vins amb estructura i amb pot&egrave;ncia com els rosats de nova generaci&oacute;, vins que ens facen gaudir i aporten un poc de felicitat als nostres menjars.
