Si no saps per quin decantar-te, en Els Magazinos aquest mes pots provar la gamba de moltes maneres diferents. Per&ograve; no sols has de pensar en la gamba roja, tamb&eacute; la gamba blanca, les galeres i els escamarlans donen molt de si i, amb una bona elaboraci&oacute;, poden convertir-se en una menja exquisida. Per aix&ograve;, de la m&agrave; de Cerveses T&uacute;ria, el programa Cuina de Territori dedica el mes de novembre a aquests productes, molt de la nostra mar, i tamb&eacute; a altres dos tamb&eacute; molt mediterranis: l&#39;oli i les olives.&nbsp;<\/p>\n<p>Els establiments del mercat gastron&ograve;mic adherits al programa han preparat una atractiva oferta de plats en els quals utilitzen algun d&#39;aquests productes com a ingredient. Tots ells estan molt presents en la cuina de D&eacute;nia i la Marina Alta i no sempre tenim l&#39;oportunitat d&#39;assaborir-los<\/p>\n<p>Perqu&egrave; pugues saber alguna cosa m&eacute;s sobre ells, Els Magazinos ha preparat dos meravellosos v&iacute;deos amb les entrevistes que ha realitzat a una parella de pescadors i a un productor d&#39;oli. Pots consultar-los en plataformes i xarxes.&nbsp;<\/p>\n<p>Amadeu i Marc Ros, pare i fill, s&oacute;n pescadors del vaixell Cap Prim Segon de la Confraria de X&agrave;bia. Practiquen l&#39;art de l&#39;arrossegament i s&oacute;n experts a pescar gamba roja. El seu vaixell i estil de pesca s&oacute;n molt especials, ja que realitzen una pesca d&#39;arrossegament respectuosa amb el mitj&agrave;. Eleven les &ldquo;portes&rdquo; de la seua embarcaci&oacute; (una de les conegudes com a barca de bou) a 5 metres del fons mar&iacute; per a evitar arrossegar les gambes pel fang. Una altra curiositat, el Cap Prim Segon &eacute;s l&#39;&uacute;nic vaixell de la Marina Alta que porta entre la seua tripulaci&oacute; una dona embarcada.<\/p>\n<p>Per a parlar d&#39;oliveres i olis de Diania, s&#39;ha entrevistat a Pedreguer a H&eacute;ctor Carri&oacute;, qui ha parlat sobre el seu projecte d&#39;ecologia sostenible TOSSUT. El seu &eacute;s un oli d&#39;oliva verge que t&eacute; unes caracter&iacute;stiques molt especials gr&agrave;cies a la ubicaci&oacute; dels olivars en els bancals del Pouet i a la recollida primerenca que realitza. El nom de l&#39;oli el va inspirar el seu ruquet, que ha fet d&#39;ell la seua marca emblem&agrave;tica.<\/p>\n<p>Recorda: De l&#39;1 al 30 de novembre &eacute;s temps d&#39;olis i olives, gambes, galeres i escamarlans en Els Magazinos. Aix&iacute; que no t&#39;ho penses i decideix-te per algun de tots aquests plats; segur que trobes m&eacute;s d&#39;un que t&#39;agradar&agrave;:<\/p>\n<p>Ceviche fregit de rap i gamba amb llet de blat al safr&agrave; sobre moniato al forn de llenya; Coca d&#39;oli de Diania amb carabassa, canyella i c&iacute;trics amb ganache de xocolate i escata de sal; Paella de galera, denton i espinacs (els tres en A la Fresca), Gamba roja a la bbqq japonesa i a la flama, sobre bolets al wok, i oli d&#39;oliva deshidratat (Grndback); Tagliatelle amb all, oli, julivert i gamba roja de D&eacute;nia (Santa pasta); Curri verd amb gambes (Kamin Thai), Entranya amb Chimichurri d&#39;Olis de Diania (Patag&ograve;nia), Punxe de s&eacute;pia de llotja de D&eacute;nia (Pinchoteca); Tomatuna. Croqueta de tomaca amb tataki de tonyina i maionesa de soja i freses (Qmcomo); Guisito de cangrejitos de la Llotja de D&eacute;nia (Baret de Robert); Tac de Gamba Roja de D&eacute;nia. Gamba, Ceba morada, tomaca, coriandre, reducci&oacute; de ginebra c&iacute;trica (The Speak), Vitolina d&#39;escamarlans flambeadas al whisky (Cachirulo) i Gamba roja de D&eacute;nia (Ostrarium).<\/p>\n","protected":false},"excerpt":{"rendered":"Planxa o bullida?
