Necessaris s&oacute;n per als &eacute;ssers humans els aliments. Per&ograve; el ritual del menjar va m&eacute;s enll&agrave; de la ingesta aliment&agrave;ria. Ens fa goig una taula ben parada, un plat ben preparat o un vi ben servit. I si damunt ens expliquen d&rsquo;on venen els productes que s&rsquo;han utilitzat, quines qualitats tenen eixos caldos o quina varietat d&rsquo;olives s&rsquo;ha emprat per a fer l&rsquo;oli amb qu&egrave; amanirem l&rsquo;ensalada ens quedem m&eacute;s que pagats. La gastronomia est&agrave; de moda. Els xiquets volen ser cuiners. I al voltant d&rsquo;eixe m&oacute;n es crea tota una ind&uacute;stria que va m&eacute;s enll&agrave; de la restauraci&oacute; i que ens fa pensar en el present i el futur, per&ograve; tamb&eacute; en el passat. Els nostres museus, espill de la hist&ograve;ria de la ciutat, ens permeten descobrir tamb&eacute; quina ha estat la lit&uacute;rgia de la taula i del bon menjar a trav&eacute;s del temps, des de l&rsquo;antiguitat cl&agrave;ssica fins el segle passat.<\/p>\n<p>La gastronomia, com assenyala Josep A. Gisbert, arque&ograve;leg, es pot entendre com a gust, com a tast, com a art i tamb&eacute; com a hist&ograve;ria i arqueologia. &Eacute;s clar, &ldquo;quan les fonts s&oacute;n m&iacute;nimes&rdquo;, afegeix, &ldquo;els testimoniatges arqueol&ograve;gics serveixen d&rsquo;alguna manera per entendre la lit&uacute;rgia de la taula i tamb&eacute; el menjar al llarg dels segles&rdquo;. Per una banda, l&rsquo;arqueologia trau a la llum els contenidors amb els quals es duen els productes d&rsquo;un lloc a l&rsquo;altre, es comercialitzen. I tamb&eacute; els serveis de taula, que no sempre s&oacute;n els mateixos perqu&egrave;, igual que passa amb la gastronomia, l&rsquo;alimentaci&oacute;, els plats i l&rsquo;est&egrave;tica, apunta Gisbert, canvien al llarg del temps.&nbsp;<\/p>\n<p>Farem una passeig pels quatre museus de la ciutat i comprovarem que podem recuperar un servei de taula del segle I aC, un del temps en qu&egrave; es funda la Taifa a principis del segle XI, o del segle XII en &egrave;poca Almohade, o tamb&eacute; un amb cer&agrave;mica importada de Barcelona-Manresa del temps de la conquesta de Sic&iacute;lia per la corona d&rsquo;Arag&oacute;, a les acaballes segle XIII. I aix&iacute; fins arribar a les cuines de joguet que es fabricaren no fa tant a la nostra ciutat, reflex de com es cuinava i es menjava a mitjans del segle passat.&nbsp;<\/p>\n<p>El Museu de la Mar exposa una magn&iacute;fica col&middot;lecci&oacute; d&rsquo;&agrave;mfores, la majoria atresorada mitjan&ccedil;ant donacions privades, precisa l&rsquo;arque&ograve;leg, &ldquo;que ens donen a con&eacute;ixer la diversitat i densitat del comer&ccedil; rom&agrave;&rdquo;. S&oacute;n &agrave;mfores per a transportar oli, vi, salsa de peix&#8230; Tamb&eacute; els vaixells enfonsats ens aporten informaci&oacute; sobre el tr&agrave;fec de mercaderies destinades a la taula. All&iacute; mateix es poden veure magn&iacute;fics conjunts de cer&agrave;mica campaniana de vern&iacute;s negre procedent del Golf de N&agrave;pols &ldquo;amb qu&egrave; podem parar taula&rdquo;. S&oacute;n plats de distintes tipologies que ens donen a con&eacute;ixer la presentaci&oacute; dels aliments i vasos que ens acosten a la lit&uacute;rgia del vi.<\/p>\n<p>&nbsp;<\/p>\n<p>BENIMAQUIA I L&rsquo;ALMADRAVA<\/p>\n<p>La import&agrave;ncia de la producci&oacute; de vi a D&eacute;nia en el m&oacute;n iber antic i en &egrave;poca romana es pot comparar amb la que tingu&eacute; la pansa en el segle XIX. En el segle VI aC, el vi produ&iuml;t a l&rsquo;Alt de Benimaquia -un dels jaciments m&eacute;s antics en la producci&oacute; de vi del Mediterrani- s&rsquo;exportava en &agrave;mfores R-1. Les &agrave;mfores i els serveis de taula estan presents en la col&middot;lecci&oacute; del Museu Arqueol&ograve;gic, on es poden vore tamb&eacute; peces del figlina o centre terrisser rom&agrave; de l&rsquo;Almadrava, que t&eacute; el seu origen en la necessitat de tindre bona cosa d&rsquo;&agrave;mfores per poder exportar el vi que es produ&iuml;a. S&rsquo;han trobat &agrave;mfores vin&agrave;ries procedents d&rsquo;este taller en el Territorium de Dianium i en el port de Cartagena, el que feia pensar en una ruta comercial meridional en temps de l&rsquo;Alt Imperi. Ara b&eacute;, la recent troballa a Roma d&rsquo;una &agrave;mfora d&rsquo;oli del s. I procedent no se sap b&eacute; si d&rsquo;Oliva o de l&rsquo;Almadrava (en les dos factories es produ&iuml;a el mateix tipus d&rsquo;&agrave;mfora), amplia el circuit comercial de l&rsquo;oli i el vi de Dianium. No sabem si l&rsquo;emperador arribaria a tastar-lo, per&ograve; s&iacute; que ho farien els soldats de les seues legions.<\/p>\n<p>&nbsp;<\/p>\n<p>L&rsquo;AIXOVAR CER&Agrave;MIC EN &Egrave;POCA ANDALUS&Iacute;<\/p>\n<p>Les peces provinents de les terrisseries de l&rsquo;Avinguda del Montg&oacute; i el carrer Teulada, d&rsquo;&egrave;poca Andalus&iacute;, ens donen idea de com era l&rsquo;aixovar cer&agrave;mic que acompanyava la cuina i taula, i per tant la gastronomia, en &egrave;poca Almohade, a les darreries del segle XII i primeries del s. XIII, a les portes de la conquesta. Una selecci&oacute; d&rsquo;estes troballes es pot veure al Museu Arqueol&ograve;gic. Explica Josep A. Gisbert que l&rsquo;estudi dels materials provinents d&rsquo;alguns castells andalusins de la comarca, com el d&rsquo;Ambra o el de Seg&agrave;ria, est&agrave; constatant que el taller de D&eacute;nia estava abastint-los d&rsquo;ataifors, plats, safes, olles i fogons port&agrave;tils per cuinar. Les troballes traspassen el territori circumdant i s&rsquo;estenen cap a la Safor, la Vall d&rsquo;Albaida i la Marina Baixa.&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>LA CONQUESTA<\/p>\n<p>El Derelicte Catal&agrave;, que deu el nom al descobridor -Antonio Catal&agrave; Bolufer- ens ofereix una mostra del parament sencer de taula de finals del s. XIII. &Eacute;s un conjunt cer&agrave;mic provinent de Catalunya, de les produccions de Barcelona-Manresa, on s&rsquo;aprecia l&rsquo;influx i les traces de la cer&agrave;mica siciliana (sanefes, dibuixos de aus, cer&agrave;mica en verd i mangan&eacute;s). Es poden apreciar algunes d&rsquo;estes peces al Museu del Mar i al Museu Arqueol&ograve;gic.&nbsp;<\/p>\n<p>Un descobriment m&eacute;s recent, el Derelicte Martos-Reyes, ofereix tamb&eacute; un magn&iacute;fic pitxer vidriat en verd per servir vi, caracter&iacute;stic del segle XIV, que s&rsquo;exposa al Museu del Mar.&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>OLLES D&rsquo;ORBETA<\/p>\n<p>Fem un salt en el temps per no fer l&rsquo;article interminable i ens traslladem al segle XIX. En la segona planta del Museu Etnol&ograve;gic trobarem la naia d&rsquo;un riurau on es reconstrueix un fog&oacute; i s&rsquo;exposen varies olles d&rsquo;Orba. S&oacute;n un exemple de la terrisseria del fang i eren element omnipresent en les cuines de les cases per a l&rsquo;elaboraci&oacute; d&rsquo;arrossos i putxeros. Procedien normalment d&rsquo;Orbeta o de Potries.&nbsp;<\/p>\n<p>En el museu trobarem tamb&eacute; c&agrave;nters per transportar l&rsquo;aigua i objectes relacionats amb el m&oacute;n de la pansa. L&rsquo;exportaci&oacute; des de D&eacute;nia i el gust angl&eacute;s per la pansa s&oacute;n ben coneguts. Ara b&eacute;, l&rsquo;estudi de la tradici&oacute; de la pansa a la cuina deniera del segle XIX &eacute;s una assignatura pendent.<\/p>\n<p>Precisament, un dels vaixells anglesos que venia a per pansa de la Marina, el Parthenon, es va enfonsar amb una important c&agrave;rrega de vaixelles de taula a bord. Descobert per Joan Castera, els plats que portava constitueixen una rellevant mostra de cer&agrave;mica victoriana Blue Willow Pattern que es pot contemplar en les vitrines del Museu del Mar.<\/p>\n<p>&nbsp;<\/p>\n<p>JOGUETS DE D&Eacute;NIA<\/p>\n<p>Qui dissenya les joguets, sobre tot en la d&egrave;cada dels 50, busca que siguen un reflex continu de la quotidianitat. &ldquo;Qualsevol cosa quotidiana -diu Gisbert- &eacute;s susceptible del disseny d&rsquo;un producte adaptat a les xiquetes i els xiquets&rdquo;. I no hi ha poques coses m&eacute;s quotidianes que menjar. Aix&iacute; que en el Museu del Joguet de D&eacute;nia, i fabricats en materials diferents, veurem cuinetes, aixovars de cuina, gelaters, vaixelles, coberteries&#8230;Tot un m&oacute;n per descobrir<\/p>\n<p>Com diu Josep A. Gisbert, &ldquo;els museus s&oacute;n un aparador d&rsquo;artefactes relacionats amb la cuina i la taula, un escaparate i un calidoscopi&rdquo;.
