S&rsquo;acosta el temps de les olives, xacades, partides, amanides&#8230; i tamb&eacute; de l&rsquo;oli. Cal estendre les veles i les mantes i preparar les canyes, els caixons i els cabassos. Sembla que no ser&agrave; un mal any. Per&ograve; no a tots els llocs &eacute;s igual. La temperatura, les pluges, la terra, la humitat i la varietat s&oacute;n alguns dels factors que condicionen el rendiment de les olives. Diuen els que en saben que, encara que les que tenen reg semblem m&eacute;s boniques, les de sec&agrave; rendeixen m&eacute;s. Influeix tamb&eacute; el premsat: si es fa en gelat, el rendiment &eacute;s menor per&ograve; la qualitat &eacute;s m&eacute;s bona. En els pobles m&eacute;s baixos, situats m&eacute;s a prop de la costa, amb temperatures m&eacute;s altes, la temporada arriba abans. Ara, al mes d&rsquo;octubre, comen&ccedil;a la temporada i el treball fren&egrave;tic a les alm&agrave;sseres, que a partir de novembre aniran a destall.<\/p>\n<p>A la Cooperativa San Isidro de Castell de Castells la campanya va comen&ccedil;ar l&rsquo;11 d&rsquo;octubre. L&rsquo;olor a oli, intens i afruitat, envaeix l&rsquo;ambient. A l&rsquo;alm&agrave;ssera arriben primer les olives &ldquo;de baix&rdquo;, ens conta Arturo P&eacute;rez, el secretari. Llauradors de X&agrave;bia, Poble Nou de Benitatxell, Gata, D&eacute;nia, Benissa o Pego porten ja les seues collites. &ldquo;Ac&iacute; dalt fa m&eacute;s fred i les olives s&oacute;n m&eacute;s tardanes&rdquo;, explica l&rsquo;home que porta el control de l&rsquo;alm&agrave;ssera. Acudeixen b&agrave;sicament clients dels pobles la Marina Alta, per&ograve; tamb&eacute; n&rsquo;hi ha de T&agrave;rbena, Polop, Bolulla o Benidorm. A la seua disposici&oacute; es posa la tova n&uacute;mero 2; la n&uacute;mero 1 est&agrave; reservada per als socis, que faran l&rsquo;oli m&eacute;s tard. Alguns s&oacute;n xicotets productors que fan oli en poqueta quantitat nom&eacute;s pel gust de fer el seu propi oli.<\/p>\n<p>Juli&aacute;n, del Poble Nou de Benitatxell, fa 7 o 8 anys que fa oli. T&eacute; unes setanta oliveres repartides en diferents bancals. Les va plantar per no tindre&rsquo;ls erms; li agrada veure la terra treballada. Diu que l&rsquo;olivera dona menys feina que el cep, tot i que requereix llaurar la terra, tirar un sac d&rsquo;adob de tant en tant, podar i &ldquo;all&agrave; baix, prop de la mar i amb la calor, arruixar per a la mosca blanca&rdquo;. Les seues s&oacute;n oliveres de sec&agrave; i de la varietat picual, &ldquo;que trau un oli m&eacute;s bo, m&eacute;s fi per a menjar&rdquo;, segons el seu gust.&nbsp;<\/p>\n<p>Trobem a l&rsquo;alm&agrave;ssera propietaris d&rsquo;oliveres de Bolulla i de D&eacute;nia. Els dos porten olives de la varietat man&ccedil;anella. Els primers per&ograve; tamb&eacute; en duen de la varietat blanqueta. &ldquo;Ac&iacute; a Castells es fa la man&ccedil;anella&rdquo;, diu Arturo P&eacute;rez, &ldquo;i de Famorca cap amunt, blanqueta&rdquo;.<\/p>\n<p>El proc&eacute;s &eacute;s sempre el mateix: s&rsquo;aboquen les olives i es posa la maquin&agrave;ria en marxa; se separen les fulles i les pedres, es llava l&rsquo;oliva, passa per la b&agrave;scula per obtenir el pes i es diposita en la tova n&ordm;2. D&rsquo;all&iacute; anir&agrave; a la batedora, el molinet de trencar, on agafar&agrave; temperatura. De 27&ordm; cap avall, el premsat es fa en gelat. La majoria de la gent prefereix fer l&rsquo;oli en calent, un proc&eacute;s que requereix tamb&eacute; d&rsquo;un bon control perqu&egrave; si se superen els 34-35 graus es corre el risc de cremar-lo. El secretari de la cooperativa fa una comparaci&oacute; amb el cos hum&agrave;: si se supera una determinada temperatura la cosa va malament. En el cas de l&rsquo;oli, es cremaria l&rsquo;&agrave;cid oleic. &ldquo;El rendiment de l&rsquo;oliva seria major&rdquo;, explica Arturo P&eacute;rez, &ldquo;per&ograve; obtindr&iacute;em un oli d&rsquo;eixos que s&rsquo;agarren a la gola&rdquo;. Com ell diu, &ldquo;qualitat i quantitat no poden ser&rdquo; i a la cooperativa de Castell de Castells volen &ldquo;oli de qualitat&rdquo;.<\/p>\n<p>Agafada la temperatura desitjada, se separar&agrave; l&rsquo;oli de la morca en la m&agrave;quina anomenada horitzontal i es far&agrave; el centrifugat per la vertical, on se separar&agrave; de l&rsquo;aigua. Des d&rsquo;all&iacute; anir&agrave; al dip&ograve;sit. &Eacute;s el moment de recollir l&rsquo;oli, cadasc&uacute; el seu, ac&iacute; no es mesclen les olives d&rsquo;uns amb les dels altres. Marraixa i embut en m&agrave;, cal nom&eacute;s obrir l&rsquo;aixeta per veure&rsquo;l caure, daurat com l&rsquo;or.<\/p>\n<p>Arturo P&eacute;rez remarca que hi ha un control sanitari i de neteja estrictes. Com marca la normativa, totes les marraixes duen l&rsquo;etiqueta d&rsquo;oli per a l&rsquo;autoconsum. En este cas, acompanyada d&rsquo;un dibuix que fa al&middot;lusi&oacute; a les pintures rupestres del Pla de Petracos.<\/p>\n<p>Enguany la cosa pinta b&eacute;. Potser els pluges de principis de l&rsquo;estiu afectaren la producci&oacute; en alguns pobles del litoral. &ldquo;Si l&rsquo;aigua tomba la mostra, all&agrave; pels mesos de juny o juliol, la producci&oacute; &eacute;s menor&rdquo;, diu el secretari. &Eacute;s prompte per saber com acabar&agrave; la temporada, all&agrave; a finals del mes de gener. Fa tres anys la campanya es va tancar amb 900.000 kg, per&ograve; en el 2020 nom&eacute;s en passaren per l&rsquo;alm&agrave;ssera 120.000. Per&ograve; les perspectives all&agrave; dalt, on es preparen per als dies de feina intensa del mes de novembre, s&oacute;n bones.
