A la fi de recuperar plats de la cuina tradicional de la Marina Alta, eixos que feien les nostres iaies i que poc a poc hem anat deixant de costat per all&ograve; de les presses, les modes i la comoditat, el Centre Integrat P&uacute;blic de Formaci&oacute; Professional (CIPFP) de D&eacute;nia ha posat en marxa un ambici&oacute;s projecte -Arrels Culin&agrave;ries- per a salvar, compartir i actualitzar eixa riquesa gastron&ograve;mica. Amb la mirada posada en el futur, i de la m&agrave; d&rsquo;agents socials i p&uacute;blics de la comarca, l&rsquo;alumnat del centre s&rsquo;ha vist immers durant cinc dies en unes jornades creatives per a donar una passa en davant en favor del sector. En les jornades han participat, entre altres, cuiners, pescadors, antics alumnes, emprenedors i professionals de l&rsquo;hosteleria. El colof&oacute; ha sigut una mostra gastron&ograve;mica, celebrada ahir divendres, on demostraven el que ja saben fer. El cam&iacute; &eacute;s llarg, perqu&egrave; la vida &eacute;s un continu aprenentatge, per&ograve; sembla que han escollit una bona senda per comen&ccedil;ar.<\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; En la Setmana de Jornades Creatives i la mostra gastron&ograve;mica han participat vora un centenar d&rsquo;alumnes del centre. No nom&eacute;s els de primer i segon de Cuina i Gastronomia. Tamb&eacute; els de Direcci&oacute; de Cuina, Servei de Restauraci&oacute;, primer de Comercialitzaci&oacute; de Productes Alimentaris i els de primer i segon de Guia Tur&iacute;stic. Han participat en tallers de cuina, cocteleria, emprenedoria i primers auxilis. Per a ells s&rsquo;han organitzat tasts d&rsquo;olis, vinagres, cervesa artesana, xocolates i vins. Tamb&eacute; xerrades, cine i la presentaci&oacute; d&rsquo;un llibre, jocs d&rsquo;aprenentatge i visites guiades, com ara al castell de D&eacute;nia, a una ag&egrave;ncia de viatges i al Mercat Central de Val&egrave;ncia, a un hotel y al Creama.&nbsp;<\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Ha sigut una setmana completa. Forma part d&rsquo;un &ldquo;projecte de vida del sector hosteler&rdquo; en el qual est&agrave; immers el CIPFP, com deia la seua directora, Marisa Ballester. Arrels Culin&agrave;ries, una proposta d&rsquo;innovaci&oacute; i inclusi&oacute; educativa finan&ccedil;ada per la Conselleria d&rsquo;Educaci&oacute;, n&rsquo;&eacute;s una mostra. Tamb&eacute; un exemple de comprom&iacute;s amb la comunitat i el territori. Aix&iacute; &eacute;s posava de manifest en l&rsquo;acte de cloenda de les Jornades Creatives, on a m&eacute;s d&rsquo;una degustaci&oacute; d&rsquo;elaboracions tradicionals de la Marina Alta es van muntar uns estands professionals amb productes gastron&ograve;mics.<\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Alumnat del cicle formatiu mitj&agrave; d&rsquo;olis i vins i del b&agrave;sic d&rsquo;alimentaci&oacute; de l&rsquo;IES de Teulada es va sumar a la fireta. Aportaren tres vins negres que han elaborat enguany, amb noms tan suggeridors com Cap de Suro, Embruta Sopars o Mil H&ograve;mens. El ra&iuml;m que han utilitzat &eacute;s de la varietat gir&oacute; i prov&eacute; de bancals de Teulada i Xal&oacute;. Tamb&eacute; donaren a tastar tres olis monovarietals (arbequina, Villalonga i picual) de distinta proced&egrave;ncia. En este cas, enguany no hi ha hagut producci&oacute; pr&ograve;pia per falta de mat&egrave;ria prima. Ara b&eacute;, el pa per a untar-lo -aix&iacute; com la focaccia i la coca de xocolate que s&rsquo;ofer&iacute;- havien sigut elaborats per l&rsquo;alumnat.<\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Darrere tot el muntatge de l&rsquo;acte de cloenda hi havia una acurada preparaci&oacute;. L&rsquo;alumnat dels cicles de Guia Tur&iacute;stic del CIFP de D&eacute;nia es va fer c&agrave;rrec del protocol i la recepci&oacute; dels convidats, mentre que els estudiants del cicle de Comercialitzaci&oacute; de Productes Alimentaris s&rsquo;encarregaren de l&rsquo;esmorzar de la comunitat educativa. Des dels cicles de Cuina i Gastronomia, Direcci&oacute; de Cuina i Servei de Restauraci&oacute; es va preparar i servir l&rsquo;&agrave;pat, al qual foren convidats familiars, professionals i entitats col&middot;laboradores.<\/p>\n<p>Entre els productes salats, hamburgueses de figatells amb ceba i mostassa, coques de dacsa, mossets de tomacat i capell&agrave;, un tast de putxero de polp i de suquet de peix, mandonguilles d&rsquo;abadejo, coques i pastissets. I per arrodonir la festa, <em>lemon<\/em> i <em>orange pie<\/em> (tartaleta de crema de llima o de taronja amb merengue itali&agrave;), pastissets de cacauet i tall&agrave; de moniato. Una versi&oacute; actualitzada del past&iacute;s nupcial d&rsquo;ametla, moniato i merengue completava l&rsquo;assortit de dol&ccedil;os.
