La tradici&oacute; gelatera i torronera de la seua fam&iacute;lia, que prov&eacute; de Xixona, es remunta a 1912. Els seus pares, Antonio i Rosario, en companyia d&#39;uns familiars, obririen mercat a la ciutat a partir de 1953. Amb el pas dels anys, cadascun seguiria el seu cam&iacute; i els Miquel Sirvent regentarien La Jijonenca &lsquo;de dalt&rsquo;, hui Miquel Gelater. Marco es jubila despr&eacute;s d&#39;una vida dedicada en cos i &agrave;nima a la seua professi&oacute;. Des de 2017 presideix l&#39;Associaci&oacute; Nacional de Gelaters Artesans d&#39;Espanya (ANHCEA). &Eacute;s vicepresident de Artglace, que reuneix les associacions de gelaters artesans de vuit pa&iuml;sos de la Uni&oacute; Europea.<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><strong>PREGUNTA: Per qu&egrave; he de comprar un gelat artes&agrave; i no un industrial?<\/strong><\/p>\n<p>R: La mat&egrave;ria primera &eacute;s de primera qualitat i t&eacute; menys quantitat d&#39;aire. En l&#39;industrial, hi ha m&eacute;s aire i m&eacute;s volum, per&ograve; menys gelat. Hi ha industrials que utilitzen bona mat&egrave;ria primera, per&ograve; tamb&eacute; greixos saturats i molta qu&iacute;mica, aromatitzants i estabilitzants per a donar-los una vida &uacute;til m&eacute;s llarga&hellip; Fa ja uns anys que nosaltres intentem a m&eacute;s utilitzar productes de proximitat creant, sempre que es pot, sin&egrave;rgies amb la comarca. Tenim l&#39;avantatge tamb&eacute; que si volem treure un sabor nou, no hem de passar per un munt de departaments com ocorre amb l&#39;industrial&hellip; m&agrave;rqueting, publicitat. Un altre avantatge, podem explicar al client qu&egrave; &eacute;s el que s&#39;est&agrave; menjant perqu&egrave; nosaltres s&iacute; que sabem el que porta.<\/p>\n<p><strong>P: Com podem saber que no ens donen gat per llebre?<\/strong><\/p>\n<p>R: Si t&eacute; colors cridaners, no et fies. A mi a vegades m&#39;han dit que els meus gelats tenen el color molt p&agrave;l&middot;lid. Per&ograve;, per qu&egrave; li has de posar colorant al gelat? Nom&eacute;s beneficia a la vista. Tal vegada en els pastissos t&eacute; m&eacute;s sentit. Per&ograve; si en la vitrina de gelats veiem aquests colors cridaners, hem de pensar que tot &eacute;s qu&iacute;mica.<\/p>\n<p><strong>P: El gelat de pistatxo &eacute;s verd. No hauria de ser marronet? I qu&egrave; em diu del blau <em>pitufo<\/em>?<\/strong><\/p>\n<p>R: Estem acostumats a veure&rsquo;l verd. Per a aconseguir-ho li pots posar una mica de clorofil&middot;la, per&ograve; poc. Si el pistatxo est&agrave; torrat t&rsquo;eixir&agrave; marr&oacute;, per&ograve; hi ha uns pistatxos que li donen color verd&oacute;s. Si veus aquest verd escandal&oacute;s, tipus sem&agrave;for, res. El <em>pitufo<\/em> &eacute;s un gelat que es demana molt. &Eacute;s tot color.<\/p>\n<p><strong>P: I es considera artes&agrave;?<\/strong><\/p>\n<p>R: Tot el proc&eacute;s pot ser artes&agrave;, nom&eacute;s li afegeixes el colorant i per aix&ograve; no deixa de ser gelat artes&agrave;. A vegades la demanda t&#39;obliga. Estos gelats, tipus Bob Esponja i altres, evoquen sabors que agraden al paladar dels xiquets. A la meua mare un dels gelats que m&eacute;s li agradava era el <em>pitufo<\/em>. Quan va morir vaig deixar de fer-lo un temps. El que no hem de considerar artesans, per exemple, s&oacute;n els gelats elaborats amb productes naturals que han estat sintetitzats, perqu&egrave; aquests han passat per empreses qu&iacute;miques. La paraula artesania s&#39;ha prostitu&iuml;t molt.<\/p>\n<p><strong>P: Sabors cl&agrave;ssics o nous?<\/strong><\/p>\n<p>R: Continua triomfant el torr&oacute;. Quan els meus pares, hi havia cinc sabors. Hem arribat a tenir-ne fins a 80. La gent t&eacute; tend&egrave;ncia al cl&agrave;ssic, continua preguntant pel Coyote i pel pl&agrave;tan, el de la neula. Si un dia no te&rsquo;n queda i li ofereixes gelat de pl&agrave;tan, no el vol perqu&egrave; diu que no fa el mateix gust. I &eacute;s el mateix. S&oacute;n h&agrave;bits, costums. Quan arriba la temporada et pregunten qu&egrave; tens nou i despr&eacute;s, la majoria, et demanen aix&ograve; de sempre.<\/p>\n<p><strong>P: Ara es fan tot tipus de sabors.<\/strong><\/p>\n<p>R: La federaci&oacute; europea trau tots els anys un sabor que es fa en tota Europa. El <em>gelato 2025<\/em> &eacute;s l&#39;Al&middot;leluia, per aix&ograve; de l&#39;any jubilar. En la fira de gener es fa el concurs per a treure el sabor. No hi ha limitacions, la imaginaci&oacute; de cadasc&uacute;. Hem eixit guanyant. En aix&ograve; de l&#39;hostaleria la gelateria &eacute;s <em>el patitio feo<\/em>. La recepta guanyadora es passar&agrave; a tota Europa. Es far&agrave; una degustaci&oacute; en la Pla&ccedil;a de Sant Pere el 23 de mar&ccedil;, amb audi&egrave;ncia papal i tot.<\/p>\n<p><strong>P: Parle&#39;ns del<em> patito feo<\/em>.<\/strong><\/p>\n<p>R: Es parla de gastronomia per tot arreu, de cuiners, els cambrers no apareixen. Tamb&eacute; d&#39;alguns pastissers per&ograve; gelaters&hellip; cap. A poc a poc anem fent xicotetes passes i apareixent en alguns esdeveniments gastron&ograve;mics.<\/p>\n<p><strong>P: Qu&egrave; t&eacute; m&eacute;s sortida, la terrina, la neula&hellip;?<\/strong><\/p>\n<p>R: Per zones. Vam fer una enquesta. En alguns llocs va m&eacute;s la terrina i en uns altres, ni la gasten. Aqu&iacute; va m&eacute;s la terrina que la neula. Els estrangers tiren m&eacute;s a la neula.<\/p>\n<p><strong>P: I el &lsquo;x&agrave;mbit&rsquo;?<\/strong><\/p>\n<p>R: Pr&agrave;cticament no representa ni l&#39;1% del gelat que ix. S&iacute; que es venen les barres de gelat per a portar a casa en celebracions, s&oacute;n m&eacute;s f&agrave;cils de tallar.<\/p>\n<p><strong>P: Inoler&agrave;ncies i al&middot;l&egrave;rgies.<\/strong><\/p>\n<p>R: En els &uacute;ltims anys aix&ograve; ho ha canviat tot, cada vegada se&rsquo;n diagnostiquen m&eacute;s. Fa 25 o 30 anys nom&eacute;s es parlava del gluten, que pr&agrave;cticament no ens afecta. Vam introduir neules sense gluten. Ara hi ha molts al&middot;l&egrave;rgics a la lactosa i li hem hagut de llevar la llet i la nata a molts gelats. Sobretot, als de fruites. Un any vaig tenir gelat de maduixa amb llet i sense llet i el p&uacute;blic va triar directament: sense llet. Ressalta m&eacute;s el sabor de la maduixa. Els gelats d&#39;ara no tenen res a veure amb els que feia el meu pare. En aquell temps eren perfectes, per&ograve; fa ja temps que hem anat canviant la recepta. Canvies greixos per fibres vegetals, utilitzes mat&egrave;ries primeres que s&oacute;n m&eacute;s saludables i comproves com actuen&hellip; Els cursos que fem s&oacute;n importants per a tot aix&ograve;.<\/p>\n<p><strong>P: L&#39;art del gelat est&agrave; viu.<\/strong><\/p>\n<p>R: M&eacute;s viu que mai, perqu&egrave; a m&eacute;s tot el que fem es comparteix.<\/p>\n<p><strong>P: El gelat &eacute;s enemic de la dieta?<\/strong><\/p>\n<p>R: No. Per&ograve; no cal arribar a l&#39;ab&uacute;s que veiem en les pel&middot;l&iacute;cules americanes.<\/p>\n<p><strong>P: Per qu&egrave; no acaba de quallar aqu&iacute; aix&ograve; de menjar gelats pel carrer a l&#39;hivern?<\/strong><\/p>\n<p>R: Q&uuml;esti&oacute; de mentalitat. Arriba setembre i el consum s&rsquo;atura. Abans si m&eacute;s no es menjaven gelats per a postres en els restaurants a l&#39;hivern. Hem avan&ccedil;at alguna cosa. Tamb&eacute; s&#39;ha introdu&iuml;t el gelat en alguns plats. Entrar i asseure&#39;t a prendre un gelat, encara. Per&ograve; passejar pel carrer a l&#39;hivern menjant gelat, molt pocs.<\/p>\n<p><strong>P: Conserva el gelat itali&agrave; la fama que va tenir?<\/strong><\/p>\n<p>R: &Eacute;s com l&#39;oli. Ens ho compren a nosaltres i ho venen m&eacute;s car, i damunt anem i som capa&ccedil;os de comprar-ho. Hi ha gent en l&#39;associaci&oacute;, a Espanya, que t&eacute; el nom de la gelateria en itali&agrave;. Els italians tenen un m&agrave;rqueting que no tenim nosaltres. Tenen gelats bons i dolents, com aqu&iacute;. En les &uacute;ltimes competicions s&#39;ha demostrat que el gelat espanyol est&agrave; a una altura igual o superior.<\/p>\n<p><strong>P: Veurem algun dia l&#39;Institut de Recerca del Gelat Artesanal?<\/strong><\/p>\n<p>R: Est&agrave; en estand by. Va canviar el govern i havien de posar-se al dia. Ara, la DANA. El projecte est&agrave; redactat i a punt de licitar. Es construir&agrave; a Xixona.<\/p>\n<p><strong>P: Per a quan el gelat de &lsquo;pastisset de moniato&rsquo;?<\/strong><\/p>\n<p>R: N&rsquo;he fet de bunyols de carabassa, de past&iacute;s d&#39;ametlla, de gofre&hellip; De moniato he fet coses per&ograve; el pastisset requereix farina i amb ella est&agrave;s limitant el consum. S&#39;hauria d&#39;adaptar, com el past&iacute;s al whisky.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Molt personal<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><strong>P: Miquel Gelater tanca. Qu&egrave; se sent?<\/strong><\/p>\n<p>R: Et ve al cap tot el que va fer la fam&iacute;lia i que despr&eacute;s continuem la meva dona, Inma, i jo. El meu pare em va donar llibertat per a provar coses noves. Sense suport de la fam&iacute;lia, sense la meva dona, que ha aportat moltes idees, i sense un equip darrere aix&ograve; no hagu&eacute;s tirat endavant.<\/p>\n<p><strong>P: Vost&egrave;s s&oacute;n molt artistes, dels gelats i de les xarxes socials.<\/strong><\/p>\n<p>R: Aix&ograve; &eacute;s cosa de la meva filla, &eacute;s molt creativa i treballa en el m&oacute;n de la publicitat. Ella fa proves amb nosaltres i despr&eacute;s ho posa en pr&agrave;ctica.<\/p>\n<p><strong>P: Estan en el cor de Marqu&eacute;s de Campo. Haur&agrave; vist moltes coses.<\/strong><\/p>\n<p>R: Ve molta gent i em diu &lsquo;tu que te&rsquo;n recordes&hellip;&rsquo;. Jo li dic a Jaume el de La Tasca que li done el relleu. Soc el m&eacute;s vell en actiu del carrer i ara ho ser&agrave; ell.<\/p>\n<p><strong>P: Qu&egrave; li ha semblat la peatonalitzaci&oacute;?<\/strong><\/p>\n<p>R: Sempre he estat favorable, no pel negoci sin&oacute; per la qualitat de vida que dona. El carrer per als vianants sempre ser&agrave; un &egrave;xit, el veiem a tot arreu. Era irremeiable. Necessita tenir aparcament a prop i un sistema de mobilitat p&uacute;blic. Tamb&eacute; un canvi de mentalitat. Abans hi havia gent asseguda que agafava el cotxe per a anar al cinema. Jo creia que anaven a l&#39;autocinema per&ograve; no, anaven al Condado. Jo continue apostant per ella.<\/p>\n<p><strong>P: President de AEHTMA i regidor de Turisme. Home amb inquietuds.<\/strong><\/p>\n<p>R: Han estat inquietuds meves i del sector. M&#39;implique en el que faig.<\/p>\n<p><strong>P: Ara que tindr&agrave; temps, tornar&agrave; a la pol&iacute;tica?<\/strong><\/p>\n<p>R: No. Li dec temps i dedicaci&oacute; a la fam&iacute;lia.<\/p>\n<p><strong>P: Tenim D*na per a llarg?<\/strong><\/p>\n<p>R: Ha d&#39;estar per a llarg. La ubicaci&oacute; est&agrave; molt b&eacute; i hi ha coses que es poden millorar, com en tot. Cal valorar a la gent que ve, encara que no siga tan coneguda, continuar apostant pels tallers i tenir clar que all&iacute; no es va a fer negoci sin&oacute; a treballar perqu&egrave; D&eacute;nia i la comarca tinguen repercussi&oacute;.<\/p>\n<p><strong>P: En &lsquo;els quatre cantons&rsquo; es couen moltes coses.<\/strong><\/p>\n<p>R: Tert&uacute;lies de savis interessants. Puges per Vicent Andr&eacute;s Estell&eacute;s i veus a l&#39;esquerra a uns i a la dreta, a uns altres. Les tert&uacute;lies s&#39;han dividit. Per&ograve; estan b&eacute;, s&oacute;n molt animades. Cal escoltar a tots. En pol&iacute;tica, a vegades nom&eacute;s se sent i escolta a qui es t&eacute; al costat.<\/p>\n<p><strong>P: Per proximitat, qu&egrave; li sembla la Glorieta?<\/strong><\/p>\n<p>R: Ha estat un <em>quiero y no puedo<\/em>. &Eacute;s un projecte inacabat. Es veu bruta, els bancs estan trencats&hellip; s&#39;hauria pogut fer millor. Ha perdut molt.<\/p>\n<p><strong>P: Quin record guarda de l&#39;Un, dos, tres?<\/strong><\/p>\n<p>R: Molt bo, era l&#39;&egrave;poca d&#39;estudiants. Ens ho pass&agrave;rem molt b&eacute;. Si torn&eacute;s a participar tornaria a triar el mateix. Vam tenir a la Ruperta en el pis d&#39;estudiants abans de portar-la a la gelateria i venien a veure-la en peregrinaci&oacute;. Una experi&egrave;ncia m&eacute;s, bona i positiva.<\/p>\n<p><strong>P: Encara hi ha gent que pregunta all&ograve; de &lsquo;en quina Jijonenca quedem, en la de dalt o la de baix?&rsquo;. Ara ja no podr&agrave; fer-ho.<\/strong><\/p>\n<p>R: No ho sabem. Ja veurem el que vindr&agrave;. No m&#39;agradaria que es munt&eacute;s qualsevol cosa.
