Situat als peus de la Sella, s&#39;ha guanyat una clientela fixa que busca no sols qualitat i tradici&oacute;. Tamb&eacute; la tranquil&middot;litat i la pau que ofereixen aqueixos llocs on un se sent a gust i no li importa estar envoltat de gent. Perqu&egrave;, encara que ho estiga, en aquest establiment el comensal se sentir&agrave; com a casa. All&iacute;, des de la seua terrassa, podr&agrave; gaudir del silenci d&#39;aqueixes amables nits d&#39;estiu a la fresca en les quals el temps sembla detindre&#39;s i les presses desapareixen. O sentir-se abrigallat per la calor de la ximenera a l&#39;hivern en el sal&oacute;, on el sol es cola t&iacute;midament pels cristalls de les finestres. Casa Meua &eacute;s Casa Teua, el programa amb el qual Els Magazinos reconeix la labor dels restaurants hist&ograve;rics, visita el dijous 26 de gener un establiment amb solera que s&#39;ha guanyat una merescuda reputaci&oacute;.<\/p>\n<p>Sense pretensions. Ac&iacute; cal vindre sense pretensions i amb l&#39;&uacute;nic objectiu de retrobar-se amb els sabors &ldquo;de tota la vida, els que et porten records d&#39;abans&rdquo;. Juan Jos&eacute; Armell Crespo sap que si una cosa aprecien els clients del restaurant Armell &eacute;s aqueixa cuina aut&egrave;ntica, que segueix la tradici&oacute; i s&#39;alimenta dels productes de temporada, de la llotja o de l&#39;hort, per&ograve; els que dona cada estaci&oacute;. Les carns s&oacute;n un dels principals reclams de la seua carta i &eacute;s ell qui s&#39;encarrega de preparar-les en la barbacoa exterior, enfront de la terrassa. B&eacute;, ell i, des de fa uns anys, el seu fill Jos&eacute; Luis, qui est&agrave; disposat a seguir amb la tradici&oacute; familiar i mantindre a flotaci&oacute; el negoci que van obrir els seus avis, Luis Armell i Mar&iacute;a Crespo, al juliol de 1985. &ldquo;Si el restaurant t&eacute; quasi 40 anys, jo vull que tinga 40 m&eacute;s&rdquo;, assenyala.<\/p>\n<p>El matrimoni Armell Crespo tenia ja experi&egrave;ncia en hostaleria quan van emprendre aquesta aventura. Entre 1975 i 1979 van estar al capdavant del Bar Tr&eacute;vol. Mar&iacute;a va tindre problemes de salut i el metge els va recomanar deixar aqueix treball. Es van decantar per una cosa m&eacute;s tranquil&middot;la per&ograve; dins del seu, la Llar de Jubilats, el bar del Camp de Tir de D&eacute;nia&hellip; i a principis dels 80, es van posar al capdavant del Bar Zaragoza de la Xara. Amb els diners que guanyaven van comprar una caseta que a poc a poc van anar reformant en la partida Albardanera, ja en terme de Pedreguer per&ograve; prop del lloc de treball. &ldquo;Diners que guany&agrave;vem, diners que pos&agrave;vem ac&iacute;&rdquo;, compte Mar&iacute;a. En tornar del servei militar, el seu fill els va proposar muntar all&iacute; el restaurant. Un visionari? Tal vegada. Comen&ccedil;ava a construir-se la urbanitzaci&oacute; La Sella, arribaven molts estrangers, no hi havia oferta pels voltants, ells eren molt coneguts&hellip; &ldquo;Provem -diu Juan Jos&eacute;-, va ser alguna cosa aix&iacute; com tirar una moneda a l&#39;aire a veure qu&egrave; passava&rdquo;. I van encertar.<\/p>\n<p>Han passat quasi 38 anys i aquell negoci que van posar en marxa Luis i Mar&iacute;a amb els seus fills -Juan Jos&eacute; i Elena- segueix avant i amb Jos&eacute; Luis, tercera generaci&oacute;, prenent bona nota de tot per a donar-li continu&iuml;tat. Ell ha estudiat dos anys cuina en el Cdt i porta ja deu treballant en el restaurant familiar. Per&ograve; de qui m&eacute;s ha apr&eacute;s, i presumeix d&#39;aix&ograve;, &eacute;s de la seua &agrave;via. &ldquo;Aix&ograve; ho he mamat des de xicotet -fa broma- i sempre he anat darrere d&#39;ella mirant les coses que fa&rdquo;.<\/p>\n<p>Al capdavant de la cuina en la qual Mar&iacute;a ha estat tants anys est&agrave; ara la seua nora, To&ntilde;i Aibar, la mare de Jos&eacute; Luis. All&iacute; es preparen arrossos -olla, paella, arr&ograve;s a banda, amb fesols&hellip;, sempre per enc&agrave;rrec- i tamb&eacute; les cl&ograve;txines en salsa o els farciments de la casa, tot un cl&agrave;ssic com ho s&oacute;n tamb&eacute; les seues croquetes. Mulladors, salaons i adobats no falten en la carta, al costat de la carn, el peix i les postres casolanes. Fora d&#39;ella, tal vegada ofereixen a qui visite la seua casa unes cigalitas saltades o un tataki de tonyina; aix&ograve; ho dir&agrave; el mercat.<\/p>\n<p>Es noten les arrels marineres -no en va Mar&iacute;a pertany a la coneguda fam&iacute;lia de &lsquo;els Canaris&rsquo;-, encara que Juan Jos&eacute; &eacute;s qui va aprendre del seu pare a preparar la fresa de tonyina, el bonic, la moixa o els capellans. Les anxoves, com les penques en vinagre o el raimet de pastor, passen per les mans expertes d&#39;ella. El secret d&#39;aquest &uacute;ltim no ens el revela. Per&ograve; ens dona unes recomanacions per a les penques: no bullir-les en exc&eacute;s i repassar-les en aigua freda, deixar-les en remull amb aigua i vinagre a parts iguals i un o dues llimes tallades durant un dia perqu&egrave; agafen gust, controlar el punt de sal -fonamental perqu&egrave; no s&#39;ablanisquen- i conservar-les en un lloc fresc.&nbsp;<\/p>\n<p>En el restaurant Armell gaudeixen comptant aquestes coses i recordant com van comen&ccedil;ar, quan el cam&iacute; estava en un estat tan deplorable que Juan Jos&eacute; i el seu pare havien d&#39;anar a posar-lo pegats, com es van anar fent les reformes o com van comen&ccedil;ar a fer clients fixos. &ldquo;Hi ha cares que veus tots els estius i fam&iacute;lies que hem vist cr&eacute;ixer, parelles que venien soles, despr&eacute;s amb els seus fills i ara amb els seus nets&rdquo;, comenten. &ldquo;A tots els estem molt agra&iuml;ts per haver-nos donat el seu suport i la seua confian&ccedil;a&rdquo;, puntualitza Juan Jos&eacute;.&nbsp;<\/p>\n<p>La confian&ccedil;a es palpa en aquells que repeteixen i tamb&eacute; en aquells que es deixen aconsellar. I aix&ograve;, reconforta. &ldquo;Nosaltres volem que el client se senta com a casa -diuen els Armell- i per aix&ograve; no renunciem al que sempre hem fet i sabem fer&rdquo;. Tenen clar que &ldquo;primer &eacute;s la tradici&oacute; i despr&eacute;s la innovaci&oacute;&rdquo;. No deixes sendes velles per novelles, diuen. I Mar&iacute;a &lsquo;la Can&agrave;ria&rsquo;, encara que ja jubilada, controlant tot el que es diu i el que es fa i orgullosa dels seus.&nbsp;<\/p>\n<p><em>El men&uacute; del dijous 26 de gener est&agrave; format per capellans a la flama, salmorra amb adobats, bunyols de bacall&agrave; de la Can&agrave;ria, salaons de la Marina, cl&ograve;txines en salsa Armell, torraet fel de sempre (entrants), xulles i peix de la badia fregit (principals) i past&iacute;s de poma de l&#39;&agrave;via amb gelat de vainilla (postres). Tot regat amb Cervesa T&uacute;ria i amb vi negre Amb un Parell de Celler Vicente Gandia (Val&egrave;ncia) i blanc Passi&oacute; de Moscatell de Celler Sierra Nord (Val&egrave;ncia).
