Que els vins dol&ccedil;os s&oacute;n ideals per a acompanyar les postres. Per&ograve; tamb&eacute; admeten altres maridatges. Que a la Marina Alta fem molt bones misteles, cert. Per&ograve; a m&eacute;s sabem fer un altre tipus de vins dol&ccedil;os que estan molt b&eacute;. Sentim-nos afortunats i presumim de tots ells. Trenquem una llan&ccedil;a a favor dels nostres vinicultors. Posem els seus vins dol&ccedil;os en els nostres men&uacute;s i sorprenguem a aquells amb els quals compartim taula i estovalles amb algun dels que s&#39;elaboren a la nostra comarca. Sens dubte, estarem donant un toc de distinci&oacute; a les nostres celebracions.<\/p>\n<p>&nbsp; &nbsp; El vi dol&ccedil; s&#39;ha associat normalment a les postres. Ara b&eacute;, si les postres en q&uuml;esti&oacute; &eacute;s molt dol&ccedil;a pot ser que ens impedisca apreciar el vertader sabor del vi. El mateix succeeix al rev&eacute;s. Per aix&ograve;, no tots els vins dol&ccedil;os casen b&eacute; amb totes les postres i, com encara molts ignoren, els vins dol&ccedil;os poden maridar a la perfecci&oacute; amb productes salats.<\/p>\n<p>&nbsp; &nbsp; El maridatge, com explica Joan Pastor, del Celler Joan de la Casa (Benissa), pot fer-se per similitud o per contrast. Ell elabora un vi dels anomenats naturalment dol&ccedil;os que aconsella particularment per a les postres de xocolate, per&ograve; tamb&eacute; per a formatges blaus, pat&eacute;s i salaons. El seu vi no porta ni sucre ni alcohols afegits -com ocorre amb les misteles-, &ldquo;tot ve del propi ra&iuml;m&rdquo;, explica Pastor. Per aix&ograve; el seu Nimi porta l&#39;apel&middot;latiu de &lsquo;naturalment dol&ccedil;&rsquo;. El proc&eacute;s d&#39;elaboraci&oacute; &eacute;s senzill: s&#39;utilitza el ra&iuml;m de l&#39;&uacute;ltima verema de l&#39;any, la m&eacute;s madura, que acaba de pasificar sobre un ca&ntilde;izo a fi que tinga la concentraci&oacute; suficient de sucre per a la fermentaci&oacute; i quede una part residual que li done dol&ccedil;or al vi. El proc&eacute;s de fermentaci&oacute; tamb&eacute; &eacute;s natural, no s&#39;utilitzen llevats de compra ni de s&iacute;ntesi i tampoc es fan correccions. Abans de res, es busca l&#39;autenticitat.<\/p>\n<p>&nbsp; &nbsp; &Eacute;s el que preval tamb&eacute; en el dol&ccedil; que elabora Celler Les Freses (D&eacute;nia, Jes&uacute;s Pobre), un altre va vindre naturalment dol&ccedil;, de verema tardana i elaborat amb ra&iuml;m que pasifican en la mateixa parra. Ella buscaria els contrastos i ho serviria amb foie, amb un bon Cabrales o amb un Stilton si s&#39;&eacute;s molt de formatges o tal vegada amb sobrassada, per all&ograve; d&#39;emular la mescla de sabors de la coca de sobrassada i mel. Ba&ntilde;&oacute; adverteix de la dificultat &ldquo;extrema&rdquo; de l&#39;elaboraci&oacute; d&#39;aquest tipus de vins. &ldquo;Has d&#39;esperar que la fruita pasifique per a agafar-la i et vas a la fi del mes de setembre&rdquo;, matisa, &ldquo;amb el risc que caiga una gota freda, es podrisca el ra&iuml;m i t&#39;ho tire tot a perdre&rdquo;. Afortunadament, diu, aquest setembre va ploure poc i la producci&oacute; ha anat b&eacute;.<\/p>\n<p>&nbsp; &nbsp; Cristina Rodr&iacute;guez Vicente elabora el M d&#39;Alexandria (Teulada-Moraira). Lamenta que els vins dol&ccedil;os estiguen una miqueta injuriats i se&#39;ls encaselle &uacute;nicament en les postres. &ldquo;Tenim un treball molt important que fer, productors, cellers i restaurants -diu- perqu&egrave; es valoren els nostres vins dol&ccedil;os, introduir-los com a aperitiu per&ograve; sense oblidar que hi ha maridatges amb postres fant&agrave;stiques&rdquo;.&nbsp;<\/p>\n<p>ENTRE EL REBUIG I EL CONFORT<\/p>\n<p>En lloc d&#39;estendre l&#39;estima pels dol&ccedil;os, el costum d&#39;obsequiar amb un xopet de vi dol&ccedil; i coca als comensals en arribar al final del men&uacute;, opina Cristina Rodr&iacute;guez, possiblement ha fet l&#39;efecte contrari. Perqu&egrave; com tots sabem i ella b&eacute; diu, &ldquo;quan alguna cosa es regala &eacute;s dif&iacute;cil pagar per aix&ograve;&rdquo;.<\/p>\n<p>&nbsp; &nbsp; Violeta Guti&eacute;rrez de la Vega lamenta aqueix rebuig cap als vins dol&ccedil;os, &ldquo;quan ac&iacute; hi ha una llarga tradici&oacute; de les misteles&rdquo;. Creu que &eacute;s degut al tema dels sucres i al fet que en certa manera se&#39;ls associa als refrescos ensucrats o a la brioixeria industrial, que tan mala fama tenen. El Casta Diva cull Mel dels Cellers Guti&eacute;rrez de la Vega (Parcent), sens dubte el dol&ccedil; de refer&egrave;ncia de la casa, &ldquo;&eacute;s un vi amb sucre natural que res t&eacute; a veure amb tot aix&ograve;&rdquo;, precisa. &Eacute;s un cl&agrave;ssic entre els dol&ccedil;os, molt conegut perqu&egrave; es va servir en les noces dels reis Felip VI i Leticia. &ldquo;&Eacute;s ni molt dol&ccedil; ni molt pesat&rdquo;, explica, &ldquo;i aix&ograve; fa que li agrada a tothom i que vaja molt b&eacute; per a acompanyar els dol&ccedil;os de Nadal.<\/p>\n<p>L&#39;auge de combinats amb alcohol considerats m&eacute;s refrescants, com el gin tonic, &eacute;s un altre factor que pot haver incidit en la baixada del consum dels vins dol&ccedil;os. Per&ograve; hi ha un tercer element a tindre en compte: &ldquo;ja no es fan les sobretaules que f&eacute;iem abans i, &eacute;s clar, encara menys ara amb el covid&rdquo;, matisa Violeta Guti&eacute;rrez de la Vega.<\/p>\n<p>&nbsp; &nbsp; En el Celler Teulada s&#39;elabora un dol&ccedil; parcialment fermentat a partir d&#39;un ra&iuml;m no madur en exc&eacute;s &ldquo;perqu&egrave; no agafe tanta dol&ccedil;or&rdquo;, ens compta Paquita Oller, presidenta de la Cooperativa de Teulada. El Pit&aacute;gora &eacute;s un moscatell d&#39;agulla de primera elaboraci&oacute; durant la verema i no supera els 9 graus d&#39;alcohol, la qual cosa ho fa &ldquo;molt bebible&rdquo;. T&eacute; un color lleugerament torrat i Oller assegura que es pot prendre en qualsevol moment. Especialment amb foie, formatges, salm&oacute; i mariscos. I, com no, amb dol&ccedil;os, pastissets de moniato i torr&oacute;. &Eacute;s un vi jove que es verema per a consumir l&#39;any a fi d&#39;evitar l&#39;oxidaci&oacute;, explica la presidenta, i t&eacute; demanda en qualsevol estaci&oacute;, tal vegada per aqueixes fines bambolles que ho caracteritzen i la seua baixa graduaci&oacute;.&nbsp;<\/p>\n<p>&nbsp; &nbsp; Entre els productes que ens ofereix una altra cooperativa de la comarca, ens detenim hui en la Mistela Vall de Xal&oacute;, elaborada amb ra&iuml;m va girar. &Eacute;s un dels vins dol&ccedil;os que elabora Cellers Xal&oacute; per&ograve; amb la particularitat que no utilitza ra&iuml;m moscatell. Est&agrave; elaborat amb ra&iuml;m de la varietat va girar i &eacute;s un bon aliat, per exemple, dels xocolates.<\/p>\n<p>&nbsp; &nbsp; Tenim els vins i sabem amb quins maridarlos. Per&ograve;, tenim clar en quina copa els hem de servir? Res de gotets. Joan Pastor ens recomana servir-los en copes, estretes de dalt i m&eacute;s &agrave;mplies per baix, per a afavorir la concentraci&oacute; d&#39;aromes i apreciar-los millor. Les copes han de ser m&eacute;s xicotetes que les de blancs i negres perqu&egrave;, en tractar-se d&#39;un vi per a postres o aperitiu, la quantitat a servir ser&agrave; poca i perqu&egrave; el vi no es calfe. I han de permetre que es puguen agafar b&eacute; per la tija perqu&egrave; no hi haja una variaci&oacute; de la temperatura per contacte.<\/p>\n<p>&nbsp; &nbsp; Recordem servir-los frescos i, si per les circumst&agrave;ncies no podem compartir-los, atrevim-nos a gaudir d&#39;ells sols. &ldquo;El dol&ccedil; &eacute;s un tipus de vi que reconforta, que pots prendre perfectament el teu solo mentre lliges un llibre o est&agrave;s assegut davant la ximenera, un vi que dona companyia&rdquo;, diu Mara Ba&ntilde;&oacute;.<\/p>\n<p>Tots els vins dels quals hem parlat s&oacute;n de la Marina Alta. Tots s&oacute;n dol&ccedil;os per&ograve; diferents.
