No ens podem quedar amb all&ograve; que tot est&agrave; inventat. Perqu&egrave; qualsevol nova aportaci&oacute;, per xicoteta que siga, pot enriquir no sols el plat sin&oacute; tamb&eacute; l&#39;oferta d&#39;un establiment. Menjar, que no &eacute;s el mateix que alimentar-se, pot ser un plaer i, al mateix temps, un descobriment. El repte del cuiner &eacute;s definir qu&egrave; vol fer amb un producte quan es posa davant d&#39;ell. Pot cenyir-se a les receptes de sempre, donar-los un toc personal o buscar noves propostes. Siga com siga el prop&ograve;sit, el producte fresc i de temporada donar&agrave; un valor afegit a les seues creacions, per a les quals ser&agrave; imprescindible tirar m&agrave; de la mem&ograve;ria, la cultura gastron&ograve;mica, la t&egrave;cnica i el coneixement i, en alguns casos, de la imaginaci&oacute;, l&#39;enginy i, tal vegada tamb&eacute;, una xicoteta dosi d&#39;aud&agrave;cia. Cadascun que moga les seues fitxes, el joc est&agrave; servit.<\/p>\n<p>Encara que semble una gosadia, les faves poden ser l&#39;ingredient d&#39;un c&ograve;ctel que tant es pot servir per a obrir l&#39;apetit com per a acompanyar un menjar. Que li ho pregunten a Valentina Vandici, que serveix un enginy&oacute;s combinat batejat com Jack i les faves m&agrave;giques amb reducci&oacute; de Cervesa T&uacute;ria en La Vermutera. Aquest mes &eacute;s el de les faves, la s&eacute;pia, el calamar i el polp en Els Magazinos, on prop d&#39;una dotzena d&#39;establiments participen en el programa Cuina de Territori. Durant tres o quatre setmanes, segons el mes, elaboren plats -en el seu cas c&ograve;ctels- amb els productes de temporada seleccionats, b&eacute; siga de la mar o del camp. Per a ella, &eacute;s un desafiament que assumeix amb ganes. En aquesta ocasi&oacute;, s&#39;inspira en una de les hist&ograve;ries recollides en els contes d&#39;Andersen per al seu c&ograve;ctel del mes, que combina vodka amb sabor de gerd, ginebra de bresquilla, bitter, xarop de cervesa i l&#39;aquafaba, substitut de la clara d&#39;ou muntada. Ho adorna amb una fulla de fava, comestible, i amb alguna cosa tamb&eacute; molt de temporada: la flor del taronger.<\/p>\n<p>Prop d&#39;all&iacute;, en El Baret de Robert, se serveixen les freses de s&eacute;pia a la planxa, una d&#39;aqueixes tapes amb hist&ograve;ria. Les prepara Robert Bordes com ho feia el seu pare en El Mar&iacute;, amb la picada d&#39;all i julivert &ldquo;de tota la vida&rdquo;, la vinagreta perfecta per a un dels plats estrela de l&#39;establiment. Pot ser que sorprenga per la seua senzillesa; el secret, el toc de planxa. I d&#39;aix&ograve;, de la planxa, ell sap molt. Ho porta en l&#39;ADN.<\/p>\n<p>Tamb&eacute; en A la fresca i en Els Cuinetes es palpa aqueix saber fer que passa de generaci&oacute; en generaci&oacute;. El millor exemple, la caldereta de s&eacute;pia inspirada en la recepta de l&#39;&agrave;via de Diana Cervera, Rosa Devesa, una motivaci&oacute; extra per a adaptar aquest conegut plat de la cuina marinera. L&#39;arr&ograve;s ha sigut substitu&iuml;t per cre&iuml;lla i el rap o el llam&agrave;ntol -ingredients habituals- per la s&eacute;pia. Si no som tan de cullera, podem optar per unes habites tendres amb manetes cruixents, un plat digne del paladar m&eacute;s exquisit. Una idea que beu de la tradici&oacute;, per&ograve; a la qual el pegolino Jos&eacute; Carlos Siscar ha fet un volt.<\/p>\n<p>En Sushiber, Borja Carri&oacute; adapta les t&egrave;cniques japoneses als productes de temporada. Ho va fer amb el verat, que es va quedar en la carta, i ho fa ara amb el polp. Prepara rotllo sushi amb tartar de polp, salsa d&#39;olives negres i alvocat, una mostra dona l&#39;evoluci&oacute; de la cuina d&#39;un local regentat per un jove que aposta per incorporar a les seues creacions productes de temporada i de proximitat, com el polp de la llotja o els alvocats de Pedreguer. I si la mat&egrave;ria primera &eacute;s de fora, parlem per exemple de tonyina o salm&oacute;, que siga sempre un producte sostenible.<\/p>\n<p>Ostrarium opta tamb&eacute; pel polp en la seua proposta del mes. Andr&eacute;s Soler dona un gir a una recepta tradicional, el polp a la gallega, sense intenci&oacute; de fer invents ni marejar la concepci&oacute; cl&agrave;ssica del plat. Simplement li dona un toc m&eacute;s fresc i dol&ccedil; acompanyant-lo amb alga wakame. Com ell diu, el polp dona joc tot l&#39;any. Encara que la temporada va d&#39;ara fins a juliol, si ho congeles -al mateix temps que evites la pallissa- ho pots utilitzar quan vulgues.<\/p>\n<p>La broqueta de polp a la gallega, un altre plat amb tradici&oacute;, &eacute;s interpretada de manera diferent des de la Pinchoteca, un lloc que utilitza com a espill la faceta creativa de les mares a l&#39;hora de buscar la manera que els fills mengem el que devem i no volem. La seua broqueta intercala rodanxes de polp de la llotja amb tacs de cre&iuml;lla cruixents, li dona un toc de calor al forn i finalitza amb un toc et pebre roig i oli d&#39;oliva. Senzill per&ograve; delici&oacute;s.<\/p>\n<p>Amb el polp ens endinsem al Carib al Mediterrani que preparen en The Speak, un tartar de polp sobre coca de dacsa cruixent i espuma de mango. Polp del Mediterrani amb amaniments del m&oacute;n en un local inspirat en la fascinant multiculturalitat de Nova York que brillava en les nits clandestines dels anys 20.&nbsp;<\/p>\n<p>Carlos G. Moreno elabora, al costat dels seus plats d&#39;inspiraci&oacute; mediterr&agrave;nia i asi&agrave;tica, una reinterpretaci&oacute; del madrileny &lsquo;bocata&rsquo; de calamars. Sota el paraigua de l&#39;anomenada Street food, per&ograve; amb un toc creatiu i sense perdre l&#39;aire de fusi&oacute;, presenta un calamar a baixa temperatura amb chiles, s&egrave;sam i c&iacute;trics dins d&#39;un pa casol&agrave;, tipus brioix, pintat amb tinta de calamar i que complementa amb maionesa de wasabi i aj&iacute; groc. Picant, diferent i amb &agrave;nima.<\/p>\n<p>Seguint la ruta del calamar ens detenim en Santa Pasta per a degustar els spaghettis que prepara Gonzalo Mariconde. Pasta fresca i calamars de la llotja. Cuina de mercat, de quil&ograve;metre 0 i de la mar, tan a prop i a vegades tan lluny d&#39;alguns paladars. De moment, el plat t&eacute; bona acceptaci&oacute; i possibilitats de quedar-se en la carta. Caldr&agrave; anar veient.<\/p>\n<p>Entre l&#39;&agrave;mplia oferta de plats de temporada, irromp el calamar encebollado. Tradicional, senzill i ric, ric. Sergi Molina i Silvia Andrade ho preparen en La Lola, on podem trobar productes i receptes a l&#39;estil andal&uacute;s amb aire d&#39;aquesta terra. &Eacute;s a dir, les receptes de Sant Ferran -on t&eacute; els or&iacute;gens la fam&iacute;lia- elaborades amb productes de proximitat.&nbsp;<\/p>\n<p>I per a tancar el cercle, tornem a les faves, que per aix&ograve; estem en temps de Pasqua. Ricardo Bertomeu elabora en El Cachirulo Faves de la iaia sacsaes, un plat que casa amb la tradici&oacute;, amb els records, amb la primavera, amb la terra i el receptari popular de la comarca.
