I aix&ograve; respon a una cultura gastron&ograve;mica amb molt de p&ograve;sit, a una mirada &agrave;mplia cap a tot el que ens envolta i a la posada en valor d&#39;all&ograve; que tenim al nostre abast i ens permet continuar llaurant el futur sense perdre de vista tres coses fonamentals: d&#39;on venim, on estem i a on anem. Sota el paraigua del &ldquo;Mercat d&#39;un M&oacute;n Millor&rdquo;, Els Magazinos porta a la fira Alacant Gastron&ograve;mica dem&agrave; diumenge tres projectes que se sustenten en els productes de proximitat, la sostenibilitat, el medi ambient i el respecte a la diversitat: Cuina de Territori, l&#39;agricultura i els xicotets productors com a base de la cuina i el Bar Inclou-em.<\/p>\n<p>La gastronomia i els productes de la Marina Alta seran els protagonistes de les activitats que Els Magazinos ha preparat per als visitants de la fira Alacant Gastron&ograve;mica. Per&ograve; la jornada estar&agrave; vertebrada tamb&eacute; per la cultura, la hist&ograve;ria i les tradicions, aix&iacute; com les accions socials i els projectes solidaris i inspiradors per a fomentar la inclusi&oacute; social que han nascut a l&#39;empara del mercat gastron&ograve;mic. Perqu&egrave;, com diu Federico Cervera, el seu creador i propietari, &ldquo;treballem per a fer un m&oacute;n m&eacute;s habitable&rdquo;.&nbsp;<\/p>\n<p>Cervera explica que en Els Magazinos &ldquo;dissenyem, organitzem i implementem per a minimitzar l&#39;impacte ambiental negatiu i intentem deixar un llegat positiu per a la nostra ciutat i tots els agents involucrats&rdquo;. Assegurar la prosperitat i la riquesa immaterial de la Marina Alta i el comprom&iacute;s de no deixar a ning&uacute; arrere guien el cam&iacute; d&#39;una iniciativa que va n&agrave;ixer en 2019 sobre la base de m&eacute;s de 20 propostes gastron&ograve;miques singulars. Accions com la inclusi&oacute; en el treball, la contractaci&oacute; sostenible, la reducci&oacute; d&#39;emissions de CO&#8322; i del consum d&#39;aigua, la gesti&oacute; adequada de residus, la utilitzaci&oacute; de productes ecol&ograve;gics o la relaci&oacute; sostenible amb l&#39;entorn i la creaci&oacute; d&#39;espais habitables per al gaudi, amb la rehabilitaci&oacute; i recuperaci&oacute; dels edificis hist&ograve;rics del mercat, formen part del seu full de ruta. Els principis de responsabilitat social i els Objectius de Desenvolupament Sostenible (ODS) de l&#39;ONU serveixen de marc per a totes aquestes actuacions.&nbsp;<\/p>\n<p><strong>LES TRES CITES<\/strong><\/p>\n<p>La primera de les cites de dem&agrave; amb Els Magazinos a Alacant Gastron&ograve;mica ser&agrave; a les 11 hores en l&#39;espai L&rsquo;Exquisit Mediterrani. All&iacute; es presentar&agrave; el programa Cuina de Territori, un calendari anual de productes de temporada del camp i de la mar que posa en valor als productors que estan darrere. O com ells ho defineixen: una oda als productes i els productors de la Marina Alta. Implica l&#39;elaboraci&oacute; de plats o tapes de quil&ograve;metre 0 i la publicaci&oacute; mensual en el canal de Youtube del mercat d&#39;una entrevista amb un agricultor i un pescador de la comarca. En la presentaci&oacute;, Diana Cervera i Jos&eacute; Siscar, xefs dels restaurants Els Cuinetes i A la Fresca, elaboraran la seua versi&oacute; del mullador de tomaca amb capell&agrave; a la flama; Pilar Pinilla, del Cachirulo, unes sardines en escabetx de la Marina; i Andr&eacute;s Soler, d&#39;Ostrarium Bar, polp sec de D&eacute;nia a la flama. Tres plats molt de la nostra comarca perqu&egrave; els assistents a la fira puguen degustar-los.<\/p>\n<p>Poc despr&eacute;s, a les 12.30 h. i en l&#39;escenari Gastronomia i Futur, es presentar&agrave; el projecte del Bar Inclou-em, un exemple de gastronomia i sostenibilitat amb enfocament social i un amuestra que &eacute;s possible aplicar els ODS en hostaleria. El projecte es desenvolupa en col&middot;laboraci&oacute; en el col&middot;legi d&#39;educaci&oacute; especial Raquel Pay&agrave; i ha aconseguit la implicaci&oacute; total dels participants. Va comen&ccedil;ar amb pr&agrave;ctiques d&#39;hostaleria de diversos alumnes i va continuar amb la contractaci&oacute; d&#39;un d&#39;ells. En el curs 2020-21 s&#39;ha fet un pas m&eacute;s amb la Formaci&oacute; Professional Dual adaptada, una cosa totalment nova, a trav&eacute;s d&#39;un calendari escolar amb 18 classes magistrals en Els Magazinos per a complementar la formaci&oacute; en el centre. L&#39;objectiu &eacute;s servir d&#39;exemple a la societat i crear un bar (&ldquo;El Guiriguay&rdquo;) que ser&agrave; gestionat per alumnes del CEE Raquel Pay&aacute; de la Formaci&oacute; Professional Adaptada d&#39;Hostaleria.<\/p>\n<p>A la presentaci&oacute; del projecte assistiran Miquel Ivars, director del centre educatiu, aix&iacute; com diversos alumnes participants en el programa, com Jos&eacute; Luis Mart&iacute;nez, Ane Bisquert Camacho, Vicente Bisquert Mengual, Pau Monjo Castella, Nolan Steve Peeters, Tania Mart&iacute;nez Rodado, Elena Biscaia Pinedo o Yenifer Rojas Escobar.<\/p>\n<p><strong>TAULA REDONA&nbsp;<\/strong><\/p>\n<p>El men&uacute; del diumenge servit per Els Magazinos en la fira es tancar&agrave; a les 17 h., tamb&eacute; en l&#39;Escenari Gastronomia i Futur, amb una taula redona en la qual participaran quatre agricultors (Toni Santacreu, Kiko Pastor, Jos&eacute; Tudela i H&eacute;ctor Carri&oacute;). Parlaran de la tomaca de la Marina Alta, que el mercat gastron&ograve;mic homenatja cada mes de juliol amb el seu concurs de la millor tomaca de la Marina.
