Perqu&egrave; la fam&iacute;lia d&rsquo;Ovidi Mas porta cinc generacions fent pansa i en saben de valent. En el sequer tenen m&eacute;s d&rsquo;un centenar de canyissos que dibuixen un paisatge de diferents colors segons com est&agrave; d&rsquo;avan&ccedil;at el proc&eacute;s d&rsquo;assecat del ra&iuml;m una vegada escaldat. Si no &eacute;s aix&iacute;, se&rsquo;n posa un miqueta m&eacute;s i es remeneja l&rsquo;aigua bullint amb la casseta.<\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; El seg&uuml;ent pas es posar el ra&iuml;m escaldat al cany&iacute;s i mans expertes s&rsquo;encarreguen d&rsquo;escampar-lo com toca, a fi que estiga ben repartit i el cany&iacute;s ben complet. I tamb&eacute; t&eacute; feina, i molta, pegar-li la volta a tots els ra&iuml;ms dels canyissos perqu&egrave; s&rsquo;assequen correctament per ambd&oacute;s costats.<\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; La producci&oacute; d&rsquo;enguany de ra&iuml;m &eacute;s de qualitat per&ograve; ha abaixat pel que fa al nombre de quilograms. &ldquo;No se n&rsquo;ha fet tant com altres anys, b&eacute; siga perqu&egrave; l&rsquo;oratge no ha sigut bo del tot i perqu&egrave; hi ha hagut un poc de mildeu&rdquo;, afirma Mas. Tot i aix&ograve;, la pansa no faltar&agrave; al mercat i la tindrem a taula per menjar-la com a un sabor&oacute;s dolcet despr&eacute;s de les menjades o com a guarniment d&rsquo;una amanida, per exemple.
